It's National Pasta Day! Celebrate with our Sweet Potato Ravioli! Full recipe below:

Sweet Potato Ravioli | brown butter, fried sage, parsnips, parmesan

Pasta Dough
Yield: about 60 Ravioli
500 grams Semolina Flour
10 each Egg Yolks
20 grams Kosher Salt
50 grams Olive Oil
400 grams Water, cold

Combine all ingredients in a mixer fitted with a dough attachment. Mix on medium speed until combined, about 2 minutes. Remove dough from mixing bowl and hand knead on work surface until thoroughly mixed.

Sweet Potato Filling
Yield: 1 Quart
640 grams Sweet Potato Puree
42 grams Ricotta Cheese
42 grams Panko Breadcrumbs
32 grams Brown Sugar
8 grams Kosher Salt

Combine all ingredients in a food processor. Blend until smooth. Transfer to a piping bag and refrigerate until ready to use.

Garnishes & Sauce Ingredients
1 lb Butter
1 Cup Pasta Water, reserved
1 Cup Heavy Cream
4 oz Sage leaves, fresh, stems removed
4 oz Parmesan Cheese Block
2 Tbsp Kosher Salt
2 each Parsnips, peeled

1. Using a pasta roller, roll pasta dough into sheets to thickness “5”. Once pasta dough is rolled into long sheets, spritz or lightly brush with water. The water acts as the glue to hold the pasta together when folded onto one another.

2. Cut the tip of the pastry bag roughly ¾” above the tip. Pipe 2 Tbsp of sweet potato filling into the center of a pasta sheet, spacing each one by about 1½”.

3. Place a second sheet of pasta of equal length over the sheet with piped filling. Gently press the top sheet down around the filling, ensuring to squeeze out any air pockets that may have formed.

4. Using a round pastry cutter that extends about ¼” beyond the filling, cut each ravioli out. Coat each cut Ravioli in a light dusting of semolina flour to prevent sticking.

5. Place 4 quarts of cold water and 2 Tbsp salt in a large pot and bring to a boil.

6. Meanwhile, make parsnip ribbons by peeling the parsnips down with a vegetable peeler. Toss with olive oil and roast in a 350°F oven for about 15 minutes, until browned and crispy.

7. Meanwhile, place the butter in a small pot, bring to a simmer and cook until browned. While still hot, carefully fry the sage leaves in the hot butter. Remove with a slotted spoon and place directly on paper towels to drain. Remove brown butter from heat and reserve.

8. Cook raviolis in salted boiling water for about 2 minutes, until tender.

9. In a large sauté pan, place 1 cup reserved pasta water and heavy cream, bring to a boil over high heat. Add cooked raviolis and brown butter, toss to combine.

10. Place raviolis in bowl, top with fried sage leaves, crispy parsnips and micro plane parmesan over the top.
