So, it's been a while. In between us getting the house done, and work, and life.
And who the Hell knew that COVID would hit?
We've been here the whole time, though we haven't heard from you guys...
It's all good. We've never been a go-to for fast takeout.
And I don't have staff, to keep it going when I'm busy.
I'm the guy you contact when you want the real thing. Just for you.
Not Franklin's, Not Snow's, you want it just for you and your family.
I'm that guy.
New for 2021-2... Don't ask me where I source.
If you're scared of eating things, I'm not the place. It's BBQ.
If you have a genuine allergy, and aren't just a weird person, let me know. The reality is that now, I source from everywhere. Because it's just that screwed up.
If you have a problem with eating tomatoes from Bali, I don't know what to tell you. Because sometimes, right now, that's the only place to get them from.
I will provide an ingredients sheet on request.
I smoke with a light char. Every brisket, gets at least 18 hours of smoke, up to 24. (That's the low and slow, way to do it)
Unless you want the full traditional.
The full traditional comes with a heavy char, carmelized, skin (for the brisket). Don't come back bitching that it was too smoky.
If you don't like smoke, either request it, or don't eat BBQ.
Also, I'm limiting orders to either a full brisket, or two racks of ribs.
Sorry, it's just not working out to do it any smaller.
Chickens? Two is the minimum order.
The wood cost has gone through the roof.
And, once again, I apologize.
We don't ship sides. They just don't do that well, and you won't be happy. However, if you want to come get them, we're happy to make you a big batch of potato salad, coleslaw, Mama's killer baked beans, or my "to die for" cowboy beans...
And, if you give me enough notice, I will show up anywhere in Texas, and throw out a Cowboy breakfast, for your group that everyone will be talking about for a long time.

Hey guys. Remember the gift packs?
I’m going to be off from work for a month, in November.
And I’ll be crawling the walls.
