Nothing I like better than a simple recipe that brings out the flavor of the food you cook instead of hiding it!
SALMON, one of my favorite types of fish! When cooked properly, it should be gelatinous/translucent on the inside, flakey on the outside! My favorite way to cook it so simple, but ABSOLUTELY INCREDIBLE!
Remove the skin from the salmon by placing the slab/filet skin side down on a cutting board! With a sharp filet knife start to remove the skin from the filet! While holding the skin tight against the cutting board, run the filet knife flat along the skin, separating the meat from the skin! TAKE YOUR TIME, letting your knife glide on top of the skin as you slowly cut the filet away!
Now that you have your skinless filet, cut it into preferred size portions. Salt and pepper these portions on both sides. Cover both sides of the fish with brown mustard. Now liberally sprinkle with brown sugar on both sides of the pieces, pressing it into the mustard! I prefer a good bit of brown sugar because the salmon cooking juices, mustard and brown sugar make an INCREDIBLE GLAZE that I put over rice! Spray a cookie sheet with PAM, arrange the salmon on the sheet and cook on 375 degrees until salmon just starts to turn white on the bottom and starts with that white color up the side. Remember the thinner parts of the filet will cook quicker than the thickest part. I start checking after about 8-10 minutes of cooking time. Remember properly cook salmon is gelatinous/translucent in the thickest part and flaky on the thinner part! Use a knife to stick in the thickest part to check to see when properly cooked! Please do not overcook! Remove the salmon placing on a platter and be sure and cover salmon with the amazing glaze that is produced from cooking!
NOTE TO READER: Many people are used to eating their salmon dry and flaky! After looking up how to properly cook salmon, my Sweet Precious Stacey Girl( my wife) realized that gelatinous/translucent is not a bad thing because it means FLAVOR! Please cook your salmon the way you prefer! By the way, this is her favorite way to eat SALMON!
