This year I was BLESSED to be asked to smoke TURKEYS and HAMS for Macon Outreach to feed the less fortunate! They turned out ABSOLUTELY PERFECT! I hope they taste half as good as they look, and they will! Life sometimes comes full circle in that my Sweet Precious Momma got food donated from Kroger and took it to Macon Outreach every day! She so believed in feeding the less fortunate through Macon Outreach, that she got a Presidential Award for Volunteer of the Year(only a few recognized in the entire United States) and got to meet President Bush at Robins! Smoking this meat brought back tons of PRECIOUS MEMORIES of my Sweet Precious Momma! She taught me when you GIVE to others, YOU are the one that receives “THE GIFT”!

My Banana Pudding is Just This Good!!!

I wanted to pass along and extremely simple recipe that you can use as a base for any dessert you can imagine! I call it FLUFF!

FLUFF RECIPE
1 can sweetened condensed milk
1 block of softened cream cheese
1 12oz. Whipped topping

Cream in your mixer the softened cream cheese and sweetened condensed milk, then mix in the whipped topping.

Now comes your creativity! You can mix this FLUFF BASE with French vanilla pudding (two cups cold whole milk and one packet of instant pudding, just follow pudding directions)to make the best banana pudding you ever ate! Add to chocolate, butterscotch or any pudding flavor you prefer! You can add real key lime juice or fresh lemon juice to this fluff base! You decide what type favorite cookie you would like to layer this with. I am a traditionalist and use vanilla wafers with my banana pudding. I use Graham crackers for the key lime or lemon. Oreos or chocolate cookies for the chocolate! Ginger Snaps are also wonderful! Make these variations up just like you would layer a banana pudding! Create your own signature desserts using this simple FLUFF BASE! As always my friends please like my page and share this recipe with your friends! ENJOY!

How many times have you heard this statement from those eating the food you have prepared, “eww, I don’t eat or like onions, bell peppers or celery in my food”? Most children say this an a surprisingly large number of adults! It is not that they do not like the flavor of onions, bell peppers, or celery, but they cannot tolerate the texture or “crunch” of an undercooked onion, bell pepper or celery! I cook for many younger adults and I have learned how to get around this phobia. Granulated onion or onion powder are wonderful substitute for onions! Celery salt is a great flavor substitute for celery, but it is too salty! What can you do to substitute the taste of bell peppers? The secret to adding the great flavor each of these veggies add to your creations is a food processor! PURÉE these veggies in your food processor to the consistency of a slushy! When you do this they sauté or cook to the point where you end up with pure flavor and absolutely NO CHUNKY, CRUNCHY TEXTURE! You must completely purée these veggies or this trick will not work! The puréed veggies adds moisture to formerly dry meat loaf and your sauces get the needed flavor without the “texture” some cannot tolerate! Try this flavor/texture hack on those that claim to have a problem eating onions, bell peppers or celery…….you will be amazed with the results! I have potential customers call me every day wanting hors d’ oeuvres, thinking the cost will be much less than a full sit down meal……..it will not be! Hors d’ oeuvres take five times the labor and are many times made of high cost ingredients! I can make a wonderful sit down meal for usually less than what others charge for hors d’ oeuvres! I tell customers I can break up a meal into heavy hors d’ oeuvres such as, twice cooked roasted garlic baked potatoes, BBQ sliders, ham and cheese sliders, Cuban sliders, cupcake size Mac & cheese, boiled shrimp, caramelized grilled smoke sausage, gourmet cup cakes and any type desert you could imagine! I do not have waiters, instead I have a serving line to refill a guest’s plate with whatever they prefer. My prices are EXTREMELY FAIR and many times much less than other caterers, but my food is SUPERIOR! I know many of you love Salmon as I do, but removing the skin is a pain! I saw a hack on Facebook of how to effortlessly remove Salmon skin! Boil a pot of water, put your slab of Salmon meat side down/skin side up on a slanted cutting board in the sink. When the cutting board is slanted down in the sink, all the hot water will run down the skin and down an open drain in the sink! Slowly pour the boiling water over the skin of the Salmon slab, then simply remove the skin with your fingers! This is SO EASY you will not believe it! Hello everyone, I hope all is well in your lives! Have you ever eaten a Ewwy Gooey Bar? If not you are missing out on a delicious, satisfying confection! I guarantee you have all the ingredients already! This is the easiest recipe, so versatile and you cannot screw it up! You can make this recipe your own according to what flavors you like most!

Ewwy Gooey Bars

Pre-heat your oven to 350 degrees .

Mix 1 egg, 1 melted stick of butter and a dry yellow cake mix( I prefer a Butter Golden). This will form a dough. In a greased 9X11” pan (any similar size pan is fine), press the dough down in the pan!

Now is where your creative taste preferences comes in. Put a layer of chocolate chips, Reese’s peanut butter chips, or butterscotch chips on top of the dough.

Mix 2 eggs, 2 cups of confection sugar and 1 softened 8oz. block of cream cheese, creaming it together with your mixer. You can use Spenda instead of sugar if you wish.

Pour this mixture over the top then place in your preheated 350 degree oven for about 20-25 minutes! DO NOT OVERCOOK, it should be lightly golden when done.

This is a very versatile recipe! You can use any flavor dry cake mix (lemon with fresh lemon juice) is amazing! The flavor layer in between the dough and topping can be anything you prefer!

This is So Simple, but SO GOOD! Try it tonight!

I will cater ANY EVENT! My most memorable catering job was after a funeral for a sweet lady I catered for several times up on Lake Oconee! She left money to feed 200 of her closest friends at her church after her funeral! I have catered some of the most fun/entertaining wedding you could ever imagine! I have catered every type celebration from birthdays, anniversaries, graduations, just about anything! I am still looking forward to my first welcome home from prison and the last meal before returning to prison party! What I love most about my job is just for a moment in time I get to share the lives of the wonderful people I have the privilege of feeding!

I hope all of my customers/friends are doing well! I know many of you do the grocery shopping for your families and you are shocked at the increased price of groceries! I started Private Parties Only LLC because it is my belief that getting married or having a special occasion catered should not put you in debt! Many times when a caterer hears the word wedding, they raise their prices because they know they can get it! I charge a fair price that is usually much less than any of my competitors and my food is MEMORABLE! I am having to charge more because the cost of ingredients have gone up 40-110%! My prices will ALWAYS be less than my competitors, but I hate having to charge more to my beloved customers! When considering a caterer, compare what is offered for your money! My food is cooked just hours before being served(ALWAYS FRESH), served hot and ALWAYS DELICIOUS! We serve your guests and every detail is taken care of! All you have to do is bring a HEALTHY APPETITE! Nothing I like better than a simple recipe that brings out the flavor of the food you cook instead of hiding it!

SALMON, one of my favorite types of fish! When cooked properly, it should be gelatinous/translucent on the inside, flakey on the outside! My favorite way to cook it so simple, but ABSOLUTELY INCREDIBLE!

Remove the skin from the salmon by placing the slab/filet skin side down on a cutting board! With a sharp filet knife start to remove the skin from the filet! While holding the skin tight against the cutting board, run the filet knife flat along the skin, separating the meat from the skin! TAKE YOUR TIME, letting your knife glide on top of the skin as you slowly cut the filet away!
Now that you have your skinless filet, cut it into preferred size portions. Salt and pepper these portions on both sides. Cover both sides of the fish with brown mustard. Now liberally sprinkle with brown sugar on both sides of the pieces, pressing it into the mustard! I prefer a good bit of brown sugar because the salmon cooking juices, mustard and brown sugar make an INCREDIBLE GLAZE that I put over rice! Spray a cookie sheet with PAM, arrange the salmon on the sheet and cook on 375 degrees until salmon just starts to turn white on the bottom and starts with that white color up the side. Remember the thinner parts of the filet will cook quicker than the thickest part. I start checking after about 8-10 minutes of cooking time. Remember properly cook salmon is gelatinous/translucent in the thickest part and flaky on the thinner part! Use a knife to stick in the thickest part to check to see when properly cooked! Please do not overcook! Remove the salmon placing on a platter and be sure and cover salmon with the amazing glaze that is produced from cooking!

NOTE TO READER: Many people are used to eating their salmon dry and flaky! After looking up how to properly cook salmon, my Sweet Precious Stacey Girl( my wife) realized that gelatinous/translucent is not a bad thing because it means FLAVOR! Please cook your salmon the way you prefer! By the way, this is her favorite way to eat SALMON!

I wanted to share a recipe if you can call it that! Go buy a product called ADOBO seasoning sold by the wonderful company GOYA! You can buy boneless, skinless chicken breasts in a family pack at Aldi for only $1.89 per pound! A family pack has 5-6 huge chicken breasts, so prepare them all at one time to be used in other recipes! With a sharp knife, cut these chicken breast lengthwise in 1/2” wide strips. Lay the chicken strips on a cookie sheet close together an liberally sprinkle with ADOBO! Cook them on a hot sprayed (Pam cooking spray) grill until desired color! Be very careful spraying the grill with Pam because cooking spray is dangerously flammable on a hot grill!Cooking on one side until you see the white color of the cooked chicken creeping up the side towards the other, then flip with tongs! This ADOBO chicken is WONDERFUL with or without BBQ sauce or Honey Mustard! Now you have a BASE meat for chicken BBQ (shred the chicken with a mixer and add your favorite BBQ sauce) or Chicken Fajitas (just sauté onions, yellow, orange and red peppers) adding ADOBO to taste then just add in the grilled ADOBO chicken! If you are a vegetarian, you can make OUTSTANDING FAJITAS without meat by sautéing the veggies with ADOBO! I am not a vegetarian, but you will not miss the meat because ADOBO is that good! I also buy petite sirloin steak from Aldi, grill whole to rare with ADOBO (after grilling slice in desired size strips) to create unforgettable steak Fajitas! Please try ADOBO, you will not believe just how good it is! ENJOY, MY SWEET PRECIOUS FRIENDS! Please LIKE AND SHARE
