🍰❤️🤍💙 Patriotic Cookie Cake: A giant cookie cake loaded with M&Ms and chocolate chips, topped with creamy frosting and sprinkles!
Ingredients
For the Cookie Cake:
• 1 1/2 cups red, white, and blue M&M candies, divided
• 1 1/2 cups chocolate chips, divided
• 12 tablespoons butter, softened
• 2 1/4 cups flour
• 2 tablespoons corn starch
• 3/4 cup brown sugar
• 1/4 cup sugar
• 1 teaspoon baking soda
• 1 egg + 1 egg yolk
• 1 teaspoon vanilla
• 1/2 teaspoon salt
For the Frosting:
• 4 tablespoons butter, softened
• 1 cup powdered sugar
• 1/2 teaspoon vanilla
• 1-2 teaspoons half and half or milk
• Red, white, and blue sprinkles: optional
Directions
1. Preheat your oven to 350°F (175°C). Grease a 10-inch quiche pan or springform pan and set aside.
2. In a large bowl or the bowl of a stand mixer, cream together the softened butter, brown sugar, and sugar until the mixture is light and fluffy.
3. Add the egg, egg yolk, and vanilla to the butter-sugar mixture, and mix until well combined.
4. In a separate bowl, whisk together the flour, corn starch, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to over-mix.
5. Fold in 1 1/4 cups of the M&M’s and 1 1/4 cups of the chocolate chips into the dough.
6. Press the dough evenly into the prepared pan. Sprinkle the remaining M&M’s and chocolate chips over the top.
7. Bake for 22-25 minutes, or until the cookie cake is golden brown. Allow it to cool completely in the pan.
8. While the cookie cake is cooling, prepare the frosting. Beat the softened butter until light and fluffy.
9. Gradually add the powdered sugar, vanilla, and 1 teaspoon of half and half. Beat until smooth, adding more half and half as needed to achieve a light and fluffy consistency.
10. Once the cookie cake is completely cooled, pipe the frosting around the edges. Decorate with red, white, and blue sprinkles if desired.
