Eastern Beast is dedicated to the tradition and craft of genuine wood-fired barbecue. Barbecue is everywhere, but great barbecue can be hard to find, especially above the Mason-Dixon line. Aside from time, patience and skill, the
one key ingredient that sets great barbecue apart from the rest is 100% wood fires -- no gas, no electric heating elements... Just wood. Our style of cooking is rooted firmly in the Central Texas barbecue tradition. High-quality meats, locally-sourced ingredients and long, slow smoking over 100% oak fires. We use only Certified Angus Beef for our briskets. The seasoning rubs and sauces we use are made from scratch. We then bring these elements together with time, patience and skill that only comes with years of experience and a genuine passion for true craft barbecue. Eastern Beast Barbecue is available for private and company events from 40-250 people. We never double-book, ensuring that your event receives 100% of our attention. SMOKED BRISKET SANDWICH
- Smoked Black Angus brisket served with scratch-made pickles, pickled red onions, and house-made bbq sauce on a Martin’s potato roll
PULLED PORK SANDWICH
- Slow-smoked pork shoulder served with house-made sweet slaw and Carolina red sauce on a Martin’s potato roll
TEXAS RED CHILI FRITO PIE
- Smoked-brisket Texas red chili over Fritos topped with Mexican shredded cheese, house-pickled jalapeños, onions, and roasted red pepper crema
LOADED MAC ’N CHEESE
- Elbow pasta baked with sweet onions and fresh herbs in a creamy cheddar cheese sauce, topped with toasted Japanese panko breadcrumbs. Order it straight or topped with smoked brisket or pulled pork!

THE INCREDIBLE SHRINKING BRISKET — Ever see brisket at the supermarket and wonder why the price of smoked brisket from a good barbecue joint is so different? Well, aside from starting with a higher grade of brisket and the long smoking process, which averages around 12-16 hours, brisket loses a lot of weight along the way. Here’s an example from our brisket cook this week. (1) We start with a full, untrimmed packer-cut Certified Angus brisket at 18.2 lbs…Then (2) we trim that monster down, removing excess exterior fat and extraneous meat that won’t smoke well, ending up with a balanced, aerodynamic brisket ready for the smoker at 11.5 lbs… Finally, as the brisket smokes gently for hours and hours, it slowly shrinks as the fat renders, the connective tissues break down into delicious collagen, and the flavors concentrate into the rich, smokey, beefy end result we all look forward to…with a final weight of just 6.7lbs. That’s 37% of its starting weight!
Taking care of business down in Austin TX this week and got to spend a day with Sausage Sensei Bill Dumas at Brotherton's Black Iron Barbecue learning the art of Texas sausage-making from the master himself. Bill is a true artist, historian and gentleman, and I can't recommend his class enough for those that want to get started the right way with artisan sausage production.

- Our St Louis pork ribs are smoked low 'n slow with white oak and cherry wood to perfect, smokey tenderness, then finished with two layers of our signature Kansas City barbecue sauce. They reheat perfectly in just 20 minutes, like they just came off the smoker. Each order feeds 6-8 people.

Daybreak here on the Beasty farm, and nine hours into a low, slow cook... 409 pounds of beautiful pork shoulder slowly transforming into succulent pulled pork for our sold-out preorders. This is my favorite part.. Feet up, cigar and coffee in hand, listening to all the little critters waking up across the quiet countryside...

The pits are lit and Eastern Beast BBQ is now taking pre-orders for the next round of slow-smoked PULLED PORK — They’ll be ready for a limited one-day pick-up in Valley Stream on Friday, April 22nd.
We smoke our pork shoulders the traditional Southern way — Low and slow over 100% oak for over 13 hours until the meat is perfectly tender. Each shoulder is then hand-pulled, vacuum sealed, frozen and ready for pick-up. These sealed packs are easily reheated at home and come out hot, juicy and ready to eat. Perfect for a quick and easy dinner or game-day pulled pork sandwiches.
Each pre-order comes with a pint of Carolina Red Sauce.

Each rib order is $60 and comes with two full racks of ribs served hot and ready to eat, enough for 6-8 healthy servings, on average.
