Sous vide flank steaks hit the wood fired grill. Our goal is to get that black crust on each steak. we cut them against the grain and they were served family style on top of drunken brussel sprouts. Smoked Prime Rib. You read that correctly. This whole rib roast gets a wet rub of garlic, herbs, olive oil, salt & pepper, then off to the smoker. We will shave it thin for a prime rib slider with caramelized onions, and horseradish steak sauce. This is one of 5 on a #sliderbar for a #foodtruckwedding we are doing this weekend.
