Tu Mesa Food Co.
Tu Mesa Foo Co. is a tribute to family, tradition and cuisine, our catering services was established by Edgar Cuspinera and his mother, María Elena Dávila in 2019. They both manage the daily operations of the business while Edgar continues to have the leadership in the kitchen and María Elena is handling administrative, development, marketing and other operational aspects of the business.
Edgar Cuspinera, our wonderful chef was born and raised in Monterrey, Mexico until he was 15, when his family relocated to Austin, Texas, where he finished high school and to pursue his dream career, he studied abroad in Buenos Aires, Argentina. Cuspinera attended the Instituto Argentino de Gastronomía, a top of the line culinary school and he also worked in different restaurants in Buenos Aires while he completed his professional education. His favorite experience in Buenos Aires was working at a charcoal grilled fish restaurant called Jangada, where he manned the grill station and prepared whole fish sides on the grill of sea bass, salmon, dorade and pacu among other types of fish and fresh pasta made by hand. In Argentina, there is a huge migration of Peruvians and Japanese nationals and Edgar considers himself very lucky, as he got to experiment with distinct flavors and a rich fusion of international cuisine. After graduating from culinary school, Cuspinera returned to Austin to see and grow with this city. He has worked with different chefs, backgrounds and ethnicities in restaurants such as Trulucks, South Congress Cafe, Lake Austin Spa & Resort, Roaring Fork, Eberly, Jeffrey’s and he is currently working at Fonda San Miguel. There is no doubt that his training in kitchens has been more leaning towards French/Texan cuisine and of course, he has been exposed to Mexican cooking growing up in a family that respects tradition and a good dish food surrounded by family and friends. ¡Buen Provecho!
