As we head into the new year we will be implementing many changes that are long over due.

In a previous post we had mentioned how we were weighing the options of using beef tallow or coconut oil by replacing the current seed oil fryer oil. Overwhelmingly the consensus was to use beef tallow. For cooking purposes Beef Tallow seems to be the clear choice. From here on out we will using beef tallow in our fryers and anything we fry will be fried in beef tallow, (with the exception of fish when we bring back fish frys and The Bigga Fish Sandwich ((which won’t be until lent)) for this application we will use coconut oil. As of now we are the only restaurant/pizzeria in a very large radius to be using beef tallow .

But this post isn’t about Beef Tallow. Since the 1980s liquid margarine took the place of real butter to make wing sauce. This yellow liquid that seems to taste so good and look so harmless has actually been something that hasn’t been our “friend”.

Ingredients in liquid margarine: Liquid and hydrogenated soybean oil, water, salt, vegetable mono & diglycerides, soy lecithin, sodium benzoate (a preservative), citric acid, natural & artificial flavor, calcium disodium edta added to protect flavor, beta carotene (color), vitamin a palmitate added. Contains: soybean

Let’s just say that it takes frying in vegetable/seed oils to a whole new level, (not in a good way) . We have been racking our brains about how we can make a change. Butter being so expensive would bring the wing cost (which is already almost unaffordable) to even a higher cost .

It wasn’t until last week that “divine inspiration” was given on how to create a new wing sauce that isn’t harmful but can actually be healthy for you. While this is so revolutionary we cant give the exact details of our new recipe, but we will say that we have …….100% COMPLETELY ELIMINATED LIQUID MARGARINE!!!!!
We have created a blend of real 100% butter, flavorless and oderless coconut oil and other natural flavor. By creating a very specific ratio and by the process of the emulsification we have cracked the code. From our mild sauce, to medium and hot as well as our famous Purple Cow Wing Sauce, all of these will now be made without the use of liquid margarine.

We without a doubt are now offering the healthiest chicken wings found anywhere in a commercial setting . These wings will taste lighter, more flavorful and cleaner. There is no taste at all of coconut (as we have sourced a refined coconut oil) .
