I love being home and in the kitchen. Creating is fun and tasty as lol.

This is a simple recipe and an easy side dish or pasta filler.

First, you want to grab everything needed for your beautiful veggie primavera mix.

Three squash
Three zucchini
Two red onion
Three red peppers
Three green peppers
Kosher salt
Course pepper
Dried oregano
Dries basil
Italian seasoning
Evo- extra virgin olive oil

Cut all ingredients into 1/4 cut pieces and set aside.
Add oil and seasoning, and herbs mix and lay on the baking sheet lined with parchment paper and roast on 375 degrees for 35-45 mind depending on your liking.

Im docter but I do know one thing though..

When I'm feeling down and under the weather, a nice hot bowl of soup and a hearty sandwich w/ sleep and ill be good.
