Ventresca Tuna Fettuccine
Save this to your and ideas💡👍!

🔖Ingredients (for one or two):

EVOO
1/2 red onion (finely sliced)
1 can of tuna (used Ventresca* tuna) drained
3-4 TBS of chunky tomato sauce
Portion your
Salt & pepper
4 dried** olives ( below, 2-in-1 post!)
Parsley (finely chopped)
(Optionally : dried red chilli flakes or 🇮🇹peperocino)

🔖 Directions:
Start boiling your pasta water, add plenty of salt to "taste like the sea" and cook your pasta al dente. [Note: this is a pretty fast recipe, so what takes longer is to actually cook the pasta].
While you let the pasta cook, drizzle a medium frying pan with EVOO, and sweat the red onion on low-medium heat for a couple of minutes. Then add the tuna and the tomato sauce, let it simmer for some minutes more and finally add some TBSPs of the starchy pasta water. Mix well but carefully so you don't break the tuna too much. When the pasta is ready transfer it with a long tweezer tongs directly to your frying pan and toss it well. Taste and adjust seasoning. To serve, roll the fettuccine with your long tweezer tongs over your plate, add the larger tuna pieces over the pasta and sprinkle with finely grated dried olive, parsley and red chilli flakes

*Ventresca tuna it's more expensive, but totally worth it, friends at sell it here in the US, truly recommend it, this we actually brought from this last trip to 😋. Had to buy an extra suitcase at the airport for canned goods and wine! 😱😱

** dried olives powder* place some olives on a microwave proof plate covered or wrapped with cling film and microwave it for 3 mins on max potency. Delicious to grate and add an extra and savory touch!

Pork Cheeks Bourguignon on Classic Mashed Potatoes and Carrot Balsamic Vinaigrette.

Cheeks are true delicacy! Pork cheeks are less known than beef cheeks, but I simply love it, super flavorful and tender.

Chef's trick: always seal the meat before you cook it, either low and slow in your Dutch oven or in your pressure cooker.

Celebrating the last day of here in Wisconsin!

There's a huge deer population around here, so even if I don't hunt myself, our family does as a tradition every year. Venison is an absolutely delicious lean meat, it should be celebrated and respected.

The toast was inspired by , after I saw her beautiful toasts topped with poached egg - who doesn't love a poached egg? Her toast is called Çilbir - made with Turkish yogurt, parsley and garlic and topped with homemade chilli butter. Go check it because it looks freaking awesome and delicious! 🙌 Sorry, next time I'll gather all the ingredients to make your recipe!

The secret is in the complex sauce. I tell you, this one has 14 ingredients. It's egg based, and usually served a little bit split.

When I used to live in Bordeaux, France, I had this all the time, at "L'entrecôte". Always with people waiting in line outside. Super busy and loud, but believe me it was worth it! Their service was ultra fast paced. You sat down, asked about your steak's doneness and if you wanted desserts, and that was it.
A typical french fast-food. 😋😋

This is part of the bi-weekly challenge called - anyone is invited to participate just use the hashtag, the ingredient chose by the sweet was, you've guessed...CORN.

This time we made it with Cilantro Lime Butter

Recipe for the Butter (about 4, depending how buttery you prefer your corn)

5 TBSP of butter
1/2 TBSP of lime juice and 1/2 lime zest
1/4 cup of cilantro finely chopped
2 garlic cloves finely minced
Pinch of salt & black pepper

Boil the corn in water with a pinch of salt until tender, about 5-7 mins. Dry well, and grill until brown on each side.

Brush the 🌽 with your cilantro butter, and finalize rolling the cobs over grated 😋😋😋
