Welp…once again I was busy in the kitchen and I’m running late for Fun Fact Friday. So as my Pentance…(Pretty big word for a Methodist/Baptist man)…I will share my Pickled Red Onion recipe with the world. (It will be in the comments)

Graduation parties and back to back events every day next week keep me in the kitchen a little longer than I expect on some days. We have been making our own BBQ Sauce (which we are so very proud of) since we started and lately we have been making our house made quick pickles and pickled onions. And now we are ready to introduce our Texas Mustard Sauce. It has hints of the Carolinas, Central Texas and our Hill Country roots.

When we say we will go anywhere…we mean it. We have served in homes, backyards, churches, rodeo arenas, oil rigs, riverbanks, beaches, casinos, dove fields, hunting camps, houseboats, nursing homes and more dancehalls than we can count.
And if we can’t get there…we will get it to you. We have even had our food helicoptered in when the rivers came down. (Wish that would happen again)

We will do what it takes.

Fun Fact Friday!!
It’s almost Fig season. In my opinion figs are overlooked and under utilized. They are fantastic simply grilled and served with a dollop of gorgonzola cheese and your favorite bbq seasoning.
The pic below is from a catering on the river several years ago. Grilled quail with a fig reduction and a herb stuffing.
I’m hoping I can beat the birds and bugs and get a bounty of figs this season.

I didn’t want today to get by without taking the time to thank someone who didn’t even know my family but loved us enough that while in the most horrible situation...thought and prayed...and decided to give the gift of life to us. On this date in 1992. My dad was laying in a room with dozens of doctors and nurses surrounding him. They were discovering that his heart was 90% dead and that for all intents and purposes...his life was over. Mom, Danny and I sat outside and tried to stop our world from spinning out of control.
First option was an artificial heart that would only give him up to 3 months to live. The second option was a heart transplant. It was Easter weekend and to be honest all I could think was I can’t believe we may be burying my dad on Easter Sunday.
But God had other plans!
And after only 3 short hours on the transplant list...Dad got his heart. At the time it was the shortest wait ever. (May still be). And another amazing fact. The young man that donated the heart was in the very next hospital. They actually walked the heart over!
God is so amazing and so loving!
If you are not a donor...please consider it. We had 20 extra years with dad. And I am forever grateful!

March thru May are generally are busiest months outside of Dove and Deer Season.

It’s all about the numbers….
Today is day 5 of 25 days of 80 customers a day. That by its self is 2000 meals. Add in our other events and we will have 62 days booked out of 90 days! And we will serve over 3200 meals.
It’s like Crab Season but without a boat and dangerous seas.
And I wouldn’t have it any other way.
Today’s menu…is pulled pork!

Starting a new trend…Fun Fact Friday!

And what better day than do that then on Good Friday.

One of my favorite times in the kitchen is before everyone comes in and I have my music playing and I’m trimming briskets. Hitting shuffle is something that makes me laugh. Slow and steady can instantly turn into loud and aggressive…but in the kitchen it all makes sense.

It’s where I find peace…
