Quick weeknight dinner. Tortellini chicken Alfredo. On the table in about 15 minutes from start to finish.
Recipe:
1 family size Tortellini of choice (this one is herb chicken)
2 jars Alfredo sauce
2Tb milk
1 package boneless, skinless chicken thighs, cut up into bite size pieces
Spices: salt, pepper, garlic and onion powders, umami spice to taste
Olive oil
While water is coming to a boil, heat oil in pan and add chicken, season to taste. Cook throughly then add Alfredo sauce, add milk to jars, shake then add to pot with chicken. Cook tortellini according to package directions, drain then add the chicken Alfredo sauce. Mix completely and serve. Can be garnished with parmesan cheese and fresh parsley

What to do when you have the flu... make a simple homemade chicken noodle soup.

Ingredients:
2 chicken thighs
1/2 gallon water
1/2 carrot diced
1 celery stalk diced
1 small onion diced
Spices: salt, pepper, garlic and onion powders, celery salt, chicken bouillon all to taste
1 bag fine egg noodles

Directions:
Boil chicken thighs in water, add diced veggies and cook until chicken is done. Remove chicken and add seasonings to taste. Remove chicken skin and discard, cut up chicken and add back into pot. Bring to boil and add noodles. Cook until noodles are done and serve.

Fried chicken breasts. Look how crispy and crunchy they are. Hard to believe that they are skinless.
Chicken breasts rinsed and dropped into a bag of AP flour. Seasoned with salt, pepper, garlic and onion powders and rotisserie chicken seasoning to taste. Fried in organic canola oil, turning every few minutes until nice and crispy and done. I season the chicken while it's frying in the pan but you can add spices to flour if you like.

Cherry crumb pie slice. I thought I might have over baked this pie but let me tell you... it is fantastic. The crumb topping is delicious and the cherry filling set up beautifully. I don't think I'll ever use canned cherry pie filling again. It is so easy to take canned or frozen cherries and make your own filling. I used 3 cans of pitted dark cherries in light syrup for this filling. I added about a cup of sugar, cinnamon and vanilla to taste, 2-3 tablespoons of minute tapioca and thickened with a cornstarch slurry.

Cherry crumb pie:
3 cans dark cherries with syrup
1 cup sugar
Cinnamon to taste
Splash of vanilla
2-3 tablespoons minute tapioca
Cornstarch slurry
1 pie crust
Crumb topping:
1 cup AP flour
1/2 cup sugar
1/2 cup brown sugar
Pinch salt
Cinnamon to taste
3/4 stick cold unsalted butter diced

Cherry pie filling: Cook cherries with syrup, sugar, spices and tapioca for a few minutes. Then thicken with cornstarch slurry. Let cool then place in crust and top with crumb topping.
Crumb topping: mix flour with sugars, Cinnamon and salt, then using pastry blender, cut in butter until mixture is crumbly. Top pie and bake at 375°F for about 40 minutes.

3 cup AP flour
1 1/2 sticks unsalted butter diced
1/3 cup vegetable shortening
1 teaspoon salt
1 tablespoon sugar
6-8 tablespoons ice water
Cherry filling:
2 cans dark cherries
1 cup sugar
Spices to taste: cinnamon, vanilla, pumpkin pie spice
2-3 tablespoons minute tapioca
Cornstarch slurry

Directions:
3 cups all purpose flour, 1 teaspoon salt, 1 tablespoon sugar in food processor, pulse a few times to mix. 1 1/2 sticks of butter and 1/3 cup vegetable shortening, very cold. I put in freezer until ready to add to food processor. Pulse until butter is mixed in flour and is the size of peas then turn food processor on high and add 6-8 tablespoons ice water, process until dough starts forming a ball. Finished dough. Turn out on floured surface, roll into disk, cover in plastic wrap and chill for at least 30 minutes then roll out into circle big enough for 9"pie plate, fill with filling and top with top crust, cut silts to vent and bake at 375°F for about 45 minutes.

1 cup sugar
Spices to taste: cinnamon, nutmeg, allspice
1/2 cup water
2 tablespoons minute tapioca

Directions:

Chorizo cilantro lime rice with black beans and corn.
1 package chorizo
2 packages cilantro lime rice side dish
1 can black beans rinsed
1 cup fresh corn cut off the cob
1 bunch cilantro chopped
Pico de Gallo
Tortilla chips

Remove skin from chorizo and saute until done. At same time cook cilantro rice according to package directions. Drain and rinse black beans and add to rice. Cut corn off cob and add to rice. I used 3 ears of corn. Add chorizo. Mix all together. Serve with Pico and tortilla chips

Seasoned with salt, pepper, garlic and onion powders, curry powder and rotisserie chicken seasoning.
Cooked in the smoker until probe internal temp reached 180°F. Nice crispy skin and super juicy.

A quick chili I made for dinner.
2lbs ground beef
2lg cans tomato puree
1 can light red kidney beans
1 can dark red kidney beans
1 diced onion
Spices: salt, pepper, garlic and onion powders, sugar, chili powder (I used 4 different kinds), cumin, coriander, cardamom, black garlic powder all to taste.
Brown beef and onions then add puree. Use enough water to clean out the can and add to the pot. Add spices to taste. I use a lot of chili powder. The chili powders I used were regular, Chipotle, hot Mexican and ancho chili powders. You can use any that you have on hand. I used only a small amount of sugar to round out the flavors. Let chili some for at least 20 minutes so all flavors can meld together.
My Family doesn't like hot spicy but if you do then go ahead and add some hot spices like cayenne, Sriracha or hot peppers.
