So trying out meals kits to give variety, maybe moser cost effective, and to test out companies…

First one I tried EveryPlate… here are a few dishes with adding my own touch of course.

All the food is tossed into the box. Good pacakaging. Some produce like the tomatoes were already too soft, green onions starting to brown. Quality of meats are not bad. Menu selection seems to be all chicken beef or pork and most is ground. That’s to be expected for the price point anyways.

Next week will be my third week, so we’ll see if I will continue or not.

Tried a new thing Flourless Bannana Peanut Butter Bread!

Yes, flourless. I’ve never made flourless bread before. I mean it never ever occurred to me it was possible!

I also started juicing again so I wanted to make use of the pulp from juicing since it still has vitamins and great in fiber! with this bread I added some orange pulp from juicing….

Super easy to make and have to say it’s not bad. Great low carb, no sugar substitute.

I also found these super delicious no sugar chocolate chips! So overall win win!

Try the recipe and let me know what you think!

2 bananas mashed
1c natural peanut butter
1/3 cup honey or maple syrup
1 Tsp baking powder
2 eggs
Optional 1 c pulp of really anything you got from juicing!

Preheat oven at 350 degrees F.
Line a bread pan with parchment paper
Mix all ingredients together in a bowl!
PLace batter in bowl, tap once or twice to even out batter in pan
Bake 40-55mins or until toothpick or knif comes out clean.
check bread at 30 min mark.

Remove pan. lift bread from paper and set load on wire rack.

Best eaten warm!!! 🥰

When your busy the moment you wake up and don’t get home until late, cause we’ll that’s just how life is, you learn to make quick meals!

Whipped up this spaghetti bolognese in 25 mins! I get to sneak in some veggies in the sauce for my picky eater and I use my go to healthier pasta noodles!

The house smells sooo good from baking these lemon blueberry muffins!!!

Added bonus… ZERO SUGAR, and they’re made with almond and coconut flour! = LOW CARB!

Yep healthy muffins made with clean ingredients 🥰

Blueberry Swirl
40 grams Fresh blueberries
1 whole lemon zest and juice
1 tablespoon Keto sweetener
1tsp vanilla
1/8 teaspoon xanthan gum

Muffins-Dry Ingredients
1 cup blanched almond flour
2 tablespoon coconut flour
1/4 cup granulated sweetener
1 teaspoon baking powder
1/8 teaspoon salt

Wet Ingredients
2 large eggs
4 tablespoon unsalted butter
1 teaspoon lemon extract
1/2 teaspoon liquid monk fruit

INSTRUCTIONS

Blueberry Swirl
Start making the swirl first. Gather all your ingredients beside the stove so they are in close reach. Mix the sweetener and xanthan gum together first this prevents clumping
Place blueberries in a small pot on medium heat and move them around. They will begin to darken and some burst so to avoid sticking keep stirring
Water will begin to release allow to simmer about 3 minutes. Add the sweetener mix and keep stirring until it thickens. Once thicken remove from heat and stir in extract lemon juice and zest. Set aside.

Muffins
Preheat oven to 350°F and melt butter
Mix all dry ingredients together

Grab cooled butter, then beat in eggs, liquid monk fruit and extract
Combine dry and wet ingredients
Lightly fold in blueberries, make a swirl dont stir and change the entire color of the batter
Place in baking cups and bake for 25 minutes. Cool 15 minutes then serve

Cake 1: (purple cake) Oreo cake layered with vanilla buttercream and Oreo crumbs. Little girl loves science experience involving slime so what can be better than an interactive cake!?!

Cake is topped with pop rocks candy! Slime will be poured over the pop rocks and cake which will then cause the popping!!! 🤩😮 (had to do some experiments myself to test my idea of course!)

Cake 2: (my 80’s rock themed cake🥰🤩) Lemon cake layered with vanilla buttercream and homemade lemon curd. 🤗😮
