-TURKISH ALI NAZIK KEBAB-
Ingredients:
2pcs. Eggplant
125g Greek yogurt
200g Ground Pork
2 tsp Tomato paste
15g Margarine
1 tsp cooking oil
Salt and Pepper
Paprika
Oregano
Peanut (toppings)
Procedure:
โข Roast the eggplant until softened and has a smokey flavor.
โข Let it cool down before peeling its skin.
โข Slice it into small pieces until like it's mashed-like texture.
โข Put yogurt into the eggplant and mix it thoroughly, then set aside.
โข In a pan put an oil and wait until itโs warm, then put the ground pork and fry it for 5-6 minutes in a medium low fire.
โข After 5-6 mins add margarine and stir it until it's well incorporated.
โข After that, add tomato paste and stir it and wait for another 5 minutes. Then, you can already add salt, pepper and your other spices according to your likings, stir it again. Turn off the heat.
โข For the plating you can put the eggplant and yogurt mixture at the bottom and the sautรฉed ground pork on top. Top it off with some peanuts.

Cooking seasonally is healthy, tasty, and a great way to be in tune with the natural rhythms of the environment around us. Here is Ms. Dillera as she demonstrates how she creates this dish by following her intuition and using one of our seasonal ingredients for this Month (Squash)
-VEGAN LUMPIA-
Ingredients for filling:
โข Garlic
โข Onion
โข Squash
โข Salt
โข Black pepper powder
โข Sweet potatoes
โข Water
โข Cornstarch
Other ingredients:
โข Oil
โข Lumpia wrapper
โข Kinchay (optional)
โข Ketchup or vinegar for sauce
Procedures:
1. Before we start chopping, put the sweet potatoes into a boil. Once done, mash and set aside.
2. Mince the onion and garlic. Chop the squash into thin strips. After chopping, open the stove and put the fire in a low medium heat. If the pan is ready, put oil and sautรฉ garlic, onion, and squash. Put your desired amount of salt and pepper to taste. After sautรฉing, put the sautรฉed filling in a bowl and set aside.
3. In a separate container, prepare a mixture consist of water, cornstarch, salt, and pepper. This will serve as a binding agent to the vegan filling.
4. Mix the sautรฉed filling with the mashed sweet potato and slowly add some cornstarch mixture.
5. Get the lumpia wrapper and put the filling inside. When done, fry the vegan lumpia.
6. Prepare a small container for the dipping sauce of choice such as ketchup or vinegar.
