West Indian stewed goat curry: marinated goat, stewed in a rich sauce made with french shallots, ginger, garlic and thyme, featuring scotch bonnet peppers with carrots and potatoes served on a bed of brown rice and (black) beans.

Korean Mapo Tofu: a hearty, fermented black bean paste and Gochujang (chili paste) simmered pork chuck stew, heavily flavored with ginger, garlic and cilantro with a firm tofu and bell peppers, and smokey, sesame fried shiitake mushrooms served on a bed of black bean paste slathered, rice stick noodles with a side of shanghai bok choy braised in sesame seed oil and sea salt. Marinated and butter crumbed tarragon chicken braised in a finely chopped mirepoix/garlic/loco chilis and smokey spices, served with heavy cream infused mashed potatoes, with a side of green beans slathered in an extra virgin, sicilian olive oil and toasted pumpkin seeds. Pork rib, 4 sausage bolognese: braised pork ribs, mild and hot homemade Italian sausage, mild and hot soppressata, sauteed mushrooms are the main behemoths in this, stewed with marrow bones, fresh oregano/basil/bay leaf and a heap of lovin' in this,one of my most popular dishes from the get go. available in 1/2 litre containers. Make your favorite pasta this week, I recommend pappardelle.
