Pork tenderloin is a quick fix type protein. It’s easy on the budget and taste great. Whether it’s grilling it on the barbeque or just a quick pan sear. Pork can easily be substituted for chicken or veal

Here’s a quick and easy recipe for pork schnitzel with a marjoram béchamel sauce.

Pork schnitzel

1 pork tenderloin
1 1/2 cups Panko breadcrumbs
2 eggs
1 Cup of flour
1/4 cup of milk
Oil
Salt and pepper to taste

Clean the pork tenderloin of all silver skin and sinew.

Cut the pieces of pork tenderloin 1/2 inch pieces, place plastic wrap over the pork on the cutting board and smash till flattened.

In 3 separate bowls, have flour, egg wash(eggs whisked with milk), and Panko.

Dip each piece of pork into flour(with salt and pepper) then into egg wash, then finished off into Panko, place aside on parchment and repeat.

Preheat pan to a medium heat on the stove top and add 1/4 cup of oil.

Slowly add your breaded pork to the oil till golden brown on one side then flip, repeat till all the tenderloin pieces are cooked.

Marjoram béchamel sauce

2 tbsp flour
2 tbsp butter
1 1/4 cups milk
Minced garlic
1/2 teaspoon marjoram/oregano
Salt and pepper to taste

Melt butter in a pot on a low/medium heat and slightly brown.
Add flour to the butter and cook till the paste bubbles.
Slowly incorporate the milk into the paste using a whisk. The mixture will slowly thicken.

Add garlic, marjoram and salt/pepper to taste.

Place the schnitzel on a plate and top with the sauce. Pair with some vegetables and some potatoes and you have yourself a nice hearty cost effective meal 😊

With everyone stuck in their houses during this pandemic. I'd figure I'd throw a couple of recipes on here for people to try. It's a great idea to take this time, especially if you have kids and get them involve and teach them some important life skills.
Keep in kind you can substitute any ingredients if you are trying to avoid the grocery stores. I always try and use fresh ingredients but feel free to use dried or powder form of some of the ingredients.

Texas meatballs

Meatballs
2 lbs medium ground beef
1 small minced onion
3 cloves minced non chinese garlic
1 tsp ground cumin
1/4 cup chopped fresh parsley

Sauce
1 cup ketchup
1/4 cup apple cider vinegar
1/4 maple syrup
2 cloves minced garlic
2 tbsp soya sauce
2 tbsp whorcestershire sauce
2 tbsp prepared mustard
I pepper and some sauce from a can of chipotle peppers in Adobo(use sparingly not to make to spicy)
2 tbsp of oil

Procedures

Place all ingredients in a bowl for the meatballs. Make sure not to over work your meatball mixture.

Slap golf ball size meatball back and forth in you hands till you notice them starting to glisten. This will help keep them together without having to add any binders.

Heat a pan on medium heat and brown the meat balls and set aside.

For the sauce, add oil to a pot on medium heat and then brown the onions adding the garlic just before the onions brown.
Add all other ingredients to the pot.
Cook on simmer for 10 mins the use a hand emulsifier or place in a food processor to blend.

Add the meatballs to the sauce and cook on low for 20 mins.

Serve on rice or mashed potatoes and enjoy.

Feel free to hit me up if you have any questions and please share.

Keep safe and eat well
