This was our experience of Tarka_dining and their listing "Premium Modern Indian dining" on our platform DINEme. Based in the Brisbane area, Australia. Tarka Dining through Chef Parag has captured spices and flavours from different areas of India and mixed them with local Australian produce to give you an authentic experience in our backyard.

First course
Chicken 65 - Dehydrated purple potato varuval, sour cream, and curry leaf spice. Derived from the street food in Chennai City, South India.
Second course
Cauli Chaat - Young cauliflower chat with sweet, sour and spicy chutney, chorizo crumbs, and sev. Popular street food in Delhi City, North India.
Third course
Konkani Spiced Salmon - Prawn ginger topped with avo purée, onion masala spice, and flying fish roe. Inspired by West Coastal spices and textures.
Fourth course
Pork Curry - Axone, fermented soybean, spicy sauce, and sticky rice. Influenced by North-East Indian cuisine.
Fifth course
Gulakand (Dessert) - Rose petal preserve, milk cream, and passion purée. A famous street cuisine of Kolkata city, Eastern India.
This experience was truly incredible, every dish made us want more and explored tastes I've never had in my life. Chef Parag Kapile was able to explain each dish and which region of India the influence of spices was known for.
