Have you ever tried Al Pastor?!
Al Pastor is traditionally made with 🐷🐷 but we substituted with chicken thigh. And it was absolutely glorious! Shout out to @trompo_king for introducing me to this.
* 2 tbsp evo
* 6 cloves of garlic
* 1/2 onion roughly chopped
* 3 guajillo chilles, deseeded
* 1/2 cup water
* 1/2 cup apple cider vinegar
* 2 chile chipotle in adobo (2 peppers, not 2 cans)
* 1 tbsp paprika
* 1 tbsp kosher salt
* 1 tsp cumin
* 1 tsp oregano
* 1/2 tsp black pepper
* 1/4 cup canned pineapple juice
* 1.5 cup chicken stock
* 12 boneless chicken thighs
* Whole pineapple cut into into round slices
Turn the stove to medium-high heat and add oil to the pan. Once hot, add the garlic and onion. Sautee for 5 minutes. Add guajillo chilles, 1/2 cup water, and 1/2 cup apple cider vinegar to pan. Let liquid boil and turn off heat. Cover for 30 minutes.
Meanwhile, mix the rest of the ingredients in a bowl or blender. After 30 minutes, add the mixture from the pan into the blender or bowl. Blend or use an immersion blender (my favorite tool!). Once the liquid cool, add the chicken and coat well. Let it marinate at least 4 hours, up to 24 hours.
Stack the first pineapple slice on the trompo then stack the chicken and try to keep it as even as possible to create a uniform shape. Top with pineapple slice. Cook at 275 in smoker or oven for 3.5-4 hours. I highly recommend using an instant read thermometer to track the internal temperature to ensure the internal temperature is 165.
Someone told me today "Dani! We need meat and goodness in our lives!" and I knew they were right. LONDON BROIL! The marinade below works with any thin cuts like flat iron, teres major/oyster steak, skirt steak, and hangar. It's so good you can drink it!
* 1 cup chopped cilantro
* 1 cup olive oil
* ½ cup soy sauce
* ½ cup orange juice
* ¼ cup lime juice
* 5 cloves minced garlic
* 1-2 jalapeños seeded and diced
* 1 teaspoon cumin
* Salt and pepper to taste
Mix well. Reserve half for meat once cooked.

When I grill a steak, this is how I do it EVERY time. Set up your grill with 2 zones: one super hot, one cool. Either no coals or gas off. You'll use this zone if you have flair ups if cooking a fatty piece (like the lamb I chops here or a ribeye etc).

Flip every 30 seconds over high heat until desired doneness. That's it! Yes, you'll flip it the first time and think it's a gray pathetic piece of meat. But trust the process! That crust will build and leave you with no gray band!

Pastrami screams Jewish deli. But this kosher girl didn't try hot pastrami until way later in life. There was no kosher deli where I could try it like it was meant to be enjoyed (thanks, Mom and Dad for never taking me to the kosher LA deli).
