Meet our Guest Chef Matteo Simonato who will bring his Milanese and Venetian Italian Flair to our second Global Collaboration 2025. Together with Chef 'Ana Ma'ilei & Chef Adriano Savio they will Curate a 5 Course Top end Pacific and Italian Dining Experience, includes All Dietaries. May, 2025.

"I am very curious about Pacific Cuisine and am always wanting to learn new Cuisines." Born in Milan on May 15, 1986, with Lombard and Venetian roots, developed a deep passion for cooking from an early age, watching and helping his maternal grandmother prepare family feasts for the holidays.

After gaining various experiences in Italy, at just 19 years old, he decided to move to Australia, where he encountered new culinary techniques and unusual ingredients that enriched his creativity and allowed him to explore innovative pairings. His journey of culinary exploration continued in China, Thailand, and Morocco, where he further deepened his knowledge of local cuisines.

After numerous travels, Matteo returned to Milan, where he joined the *Alchimista* restaurant and contributed to the opening of *Spice*, an ambitious project blending diverse flavors and cultures. Later, he became the personal chef of a Saudi prince, an experience that strengthened his ability to work in exclusive and high-end culinary environments.

Today, he leads the *Bio Agriturismo "Ciasa do Pare"* in Soraga di Fassa (TN), where he champions sustainable, genuine cuisine inspired by local flavors, with a strong connection to nature and the surrounding territory. His culinary philosophy combines a love for tradition with a relentless pursuit of innovation, creating dishes that tell stories of travel, culture, and passion.

We hear from Matteo online next Month on why this Collaboration is important and his past Mahi/Work/Ngaue leading up to his Current Curiosity for Pacific Cusine.

Planned on observing and learning but ended up saying a lot. If you want to make a difference, you've got to use your voice and put yourself out there, all respect to our Small hard-working local businesses who have built from the bottom up and are still chipping away regardless of hard times.

Even better? Thanks to the incredible Whau Local Board and Gia's Grab&Go - this event is completely free; food & all!

Pasifika Chef's Table 3 course Lunch pop-up at Gia's Grab&Go.

We had the honours of hosting our very first Corporate Lunch pop-up that included a 3 course Pasifika Inspired Menu that was Free from Common Food Allergens such as Dairy, Gluten, Peanuts and Tree Nuts.

We had the Pasifika Engineering Team from Beca support us and Join us.

As well as Samoa's First Optometrist, owner and founder of Samoa Eyecare - Erna Sablan and her partner Owner of Janet's Samoa Chris Sablan join us. Pea Vaitolo Semu from PBT came to experience and capture our story.

We continue to raise Health&Allergy awareness within the corporate spaces too.
