Beasley’s Catering Service is about preparing delicious healthy meals using fresh vegetables, fruits, and herbs from local gardens and farmers that grow food in environmental friendly ways, and without toxic or persistent agricultural chemicals. Beasley’s Catering Service began in 2012, serving clients that received personal training from her fitness business, X Your Size Inc., meal prep service.

Meal prep was done with clients at their residences.The focus was to create meals with 75% fresh fruit and vegetables, 25% fish or poultry with little or no salt, and fresh herbs for seasoning. Clients understood how healthy and unhealthy foods contributed to their overall wellness. As a result clients ultimately wanted to share their delicious, healthy meals with friends and family. Beasley’s Catering Company has received requests from clients in the movie industry to cater parties and events, while "laissez les bons temp rouler's" enjoy delicious and healthy party food. Local business, schools, individuals, people on restricted diets, and families started requesting health presentations to gain knowledge about healthy food and participate in healthy cooking classes. Beasley’s Catering Company is changing how people prepare and enjoy nutritious food in New Orleans. Today, through a generous blessing from New Orleans' own Ellen DeGeneres, Ms.Beasley’s Catering Company is providing Mighty Plates of Goodness and delicious nourishing smoothies to residents and visitors in New Orleans every day via Ms. Be on the lookout for the truck & the infamous logo, bringing “Healthy food for a Healthy New Orleans”.
