Our Peruvian Dining Experience was designed in honor of Peruvian culture while paying homage to Chef Macarena Ludena of Coracora Restaurant. Pink hues were incorporated throughout the experience, a toast to Chef Maca's love of pink, and gold touches were scattered throughout to honor the ancient indigenous Peruvians, as well as the gold touches Chef Maca implements in her modern Peruvian cuisine today. Dashes of pompoms across the grounds were inspired by Coracoras's beautifully decorated restaurant in West Hartford, Connecticut. It was an honor hosting guests and incredible community members. 30 guests were guided through a sensational tour of Peruvian cuisine on Saturday, perfectly executed by James Beard Award Semifinalist and Finalist for Outstanding Restaurant and Best Chef – New England Chef Macarena Ludena of Coracora Restaurant.

This experience was designed in honor of Peruvian culture, while paying homage to Chef Macarena and the colorfully decorated Coracora Restaurant in West Hartford, CT.

This event was produced in partnership with the Coracora team, Farmer Bill of Chakana Sky Alpacas, Bourassa Catering, Raiza Marinera, and Kevin Yong of Artesano Restaurant in NY.

Have you ever seen this kind of corn? It’s called calico corn.

With its unreal shiny kernels glimmering like rare jewels, it looks more like pieces of jewelry than actual corn with different shades of pink, purple, yellow, green and blue.

Unlike sweet corn, calico corn isn’t generally eaten off the cob. Most people grind it up into cornmeal and use it in tortillas or grits because it’s very starchy.

It can also be used to make popcorn (although it doesn’t come out rainbow-colored). To do this, the corn is harvested when it’s dry and brown. Kernels need a low moisture content to pop when heated. You can dry the corn further inside, with the husks removed, until the kernels fall off the cob.

It is also great for ornamental purposes.
