Recipe: Balsamic and Grape Jam Roasted Pears

We are freshening up your feed and cutting through all the chocolate and strawberries this month with this delicious balsamic roasted pear recipe to go with a lush bottle of Moscato. Because let's be real, Love is in the air, but wine is definitely in the glass! 🍷🥰

What you will need:
- Under-ripe pears (will bake soft)
- Unsalted butter
- Balsamic vinegar
- Grape jam (our secret ingredient)*
- Thyme
- Cast-iron or another oven-proof heavy-bottomed pan

Method:
- Preheat oven to 170 degrees.
- Halve and core the pear carefully, but leave the peel on.
- Melt 1tsp butter per 2 pear halves in a pan.
- Place the pears with the cut side facing down in the pan and sprinkle thyme over the pears.
- Sauté pears for 2 min.
- Transfer the pan to the hot oven and roast for 20 min.
- Flip the pears and drizzle with balsamic vinegar and a teaspoon of grape jam for each pear half.
- Roast for another 5 min.
- Serve warm with some of the pan juice and vanilla ice-cream.

Variations:
- Sprinkle with chopped walnuts or almonds when you add your balsamic vinegar before roasting for another 5 minutes. The caramelized, roasted nuts adds another level of flavour.

Recipe: Cheesy Garlic Pizza Bread with a Twist

No recipe is ever set in stone. We got creative and added our own little sparkle to this recipe… and there are NO REGRETS! 🤩

Ingredients:

Pizza base: (We doubled the measurements below to create these two delicious pizza bread bases).

- 2 3/4 cup sifted white flour
- 1tsp salt
- 3/4 tsp instant yeast
- 1 tbsp sugar
- 1cup + 2 tbsp room temp water
- 1 tbsp olive oil

Cheesy Garlic Spread:
- 50g butter, softened (not melted)
- 5 cloves garlic
- 2 tsp mixed herbs
- 2 tsp dried oregano
- 1 tsp salt
- Pinch of black pepper
- 1 cup mozzarella cheese, grated
- 1/2 cup cheddar cheese, grated

Extras:
- 1x onion, carmalized
- 1x fresh tomato, sliced
- 3 tbls tomato jam

Instructions

Pizza Dough
- Combine all ingredients in the bowl of a stand mixer fitted with the dough hook. Mix for 1 minute. Let the dough rest for five minutes to hydrate the flour. With the mixer on medium speed, mix for an additional three minutes.
- Drizzle a bit of olive oil on a clean work surface and rub your hands in it. Scrape out the dough from the mixer bowl and shape the dough into a ball by pulling down on either side of the dough with two hands, meeting on the bottom of the dough. Turn the ball and repeat until the dough is smooth. Cut the dough in half and again shape each piece into a smooth ball. Place in an oiled plastic bag or container fitted with a tight lid and place in the fridge for a minimum of 3 hours.
- 90 minutes before you are ready to bake, take the dough out of the fridge, place them on an oiled parchment sheet, and cover it. Meanwhile make the spread.

Cheesy Garlic Spread
- Add the softened butter, garlic, herbs and seasoning to a bowl and mash well with a fork. - Preheat the oven to 200 C
- Lightly flour your work surface and roll out one piece of dough to a rectangle the length of your baking tray. Transfer the dough to a parchment sheet.

Now for the twist 😏
- First spread the tomato jam and then half the garlic spread mix on the dough.
- Sprinkle half of the Mozzarella and Cheddar cheese. Top up with Carmalized onions and fresh tomato slices.
- Slide the parchment paper onto the baking tray and bake for 12 - 15 minutes, until cheese is bubbly and golden on top. Repeat with the second length of dough
- Slice into two finger size in width. Eat hot!

Remember to be creative and add in your own little twist to the recipe if you’d like, and most importantly - Enjoy the process! 😁

Side Chef's Handmade Jams doesn't only have to be used in sweet treats, it is also perfect for your savoury dishes! We levelled up your usual cheesy garlic pizza bread with our delicious tomato jam on the base and topped it of with some fresh tomatoes and caramelised onions 😱🤤 What a GAME CHANGER!
