We shop at local Amish stores. It goes without saying that MANY products sold in the states have bioengineered, chemicals, or just junk in them. So we go right to the source. Fresh cheese from the dairy. Honey from the beekeeper. Rye and oats from the farm grocery.

We also like supporting families directly. We have come to know these store owners and some are now like family. They also value the dollar bill; see my prior post.

In the fast pace world today, go shop local. Create the face to face. Gain the relationship. Eat the better options. Support the local families that rely on their business success.

As a homesteading, homeschooling mom I can honestly say I LOVE these products. My children do too! My 4 year old came running up to me this morning asking to smell his breath 😂 he is obsessed with the fluoride free toothpaste and essential oil mouth rinse. Before finding this combo he would fight me to brush his teeth.

Make Mayo with me from scratch! Super easy!

Mayonnaise:
1 cup avocado oil
2 egg yolks
2 tsp fresh lemon juice
Dash of salt

Now… don’t be like me. I tossed everything in my kitchen aid and thought the recipe was nuts for adding a little at a time. I was very wrong.

First add egg yolks and lemon together. I used a large coffee frother to mix at first, but you can mix by hand too the whole time.

Next SLOWLY add oil. Like a tsp at a time until it becomes thick and then you can add a bit more at a time.

Add salt and mix well.

Store in fridge.

If you can’t tell from my counter we use jars. Like for everything. Cleaner, drinking, mixing, packed lunches, literally everything! I put my egg whites in a jar and we will eat them for breakfast.

I also scrubbed my kitchen sink later with the lemon peels 🤷🏻‍♀️ my dogs ate the egg shells as a treat. We try to be waste free.

Big Mac in a bowl with many homemade ingredients!

Big Mac Sauce
-1/2 cup Mayo (Mayo recipe below)
-2 tbsp relish - I chopped our homemade pickles and added a little juice
-1 tbsp ketchup
-1/2 tsp yellow mustard
-1/4 tsp sugar or monk fruit
-1/2 tsp garlic salt
-1/4 tsp onion powder

Mayo Recipe
-1 large egg
-3/4 cup oil (I use avocado)
-1 tbsp lemon juice
Optional: salt/pepper to taste or Dijon mustard to taste

Onion and/or Garlic Powder
I dehydrate chopped onions in my dehydrator. No specific time frame, I just eye ball it. Then I process in food processor until fine powder.

I also freeze diced onions. I use my food sealer for this.

Big Mac Bowl Recipe
-1lb ground beef (I used ground Turkey)
-shredded cheddar cheese
-onions
-Big Mac sauce
-Shredded lettuce
- I dashed some onion powder, salt and pepper, & everything but the bagel seasoning too. You could also just do sesame seeds.

Super easy and so good!

We peeled 3lbs of mandarins today and made a “giant fruit cup” and cleaner.

Fruit cup:
Peeled mandarins
2 cups simple syrup and fill rest with water

Simple Syrup- I used filtered water and organic cane sugar. I heat my water to warm ish hot and stir in sugar until dissolved.

Cleaner:
All peels went into a jar. We did a 1:1 ratio of water and vinegar. Set jar in cool dark place for minimum of 2 weeks. I just spray as needed. OR you can use all vinegar and sift out peels and do 1:1 ratio later.

My daughter LOVES to crochet. She begs me all the time to crochet together. After school & work today we did just that. I made a koozie for the mug she just gave me over the weekend. 💜

VegeBox update- new lettuce went in recently. Over the holidays my VegeBox got a little neglected and I forgot to add water. The lettuce was also SO BIG it was almost reaching my cabinets before it died.

Someone asked me recently how I manage to do all the things. Spoiler.. I don’t 😂 and then plants die, appointments missed or late, etc. but I’m human and that happens. But I’m able to start seeds again in this situation and I have another chance of success 🙌🏼 we have also been so successful with VegeBox that we eat from it too much and then start seeds again too. So it’s just the way of life, cycles.

Whatever’s in the fridge cheese dip… I don’t ever measure, just eye ball it.

Cheddar cheese
Scoop of Mayo
Scoop of sour cream
Scoop of cream cheese
Scoop of pepper relish
Double scoop salsa
Little bit cayenne pepper
Little bit garlic powder
Dash of Dijon mustard

Heat and mix.

So good and kid approved! We used mostly homemade items from stuff I’ve had canned from our summer garden.

1 mature bald Eagle and 1 youngster bald Eagle 🦅 I wish I had better photos. The younger one was starting to get their white head but it was still mostly brown. Some people are unaware that these beauties have brown heads until they reach maturity around 4/5 years old. They also have a dark bill until maturity where it turns that signature yellow.

Homemade blueberry muffins 🫐

Today I learned that if you don’t use all muffins the pan can cook, fill the empties with water. This allows your muffins to cook evenly. I used 9 of the 12 available and just alternated empties on the ends of the pan and filled with 2tbsp of water and it worked well! Just be careful not to spill the boiling water when you remove them from the oven!

While my fiancé grilled steaks for us, my brother in law hung my cast iron rack for me. Good way to start the new year 🥰

Those two smaller cast iron are from my Grandma. She gave them to me as a Christmas gift over 10 years ago. I have always loved them but this past year I’ve really preferred them over anything else. The rack and largest pan were Christmas gifts this year and I just LOVE them!

I’m the one to pack up my cast iron every camp trip. They’ve been over open fire, camped in Michigan for ten days, even used them once over a charcoal grill to cook when we lost power last winter for over a week. They simply are such reliable pans!
