The weekly menus are back! Two weeks in, and I can’t tell you how happy I am to be back in the kitchen!

During the break we worked on all the bits and bobs of “background things” which are so important in running a business, but so easily overlooked in the day-to-day. We’ve:

- Completely redesigned and launched a new website
- Tested out and sourced new packaging, including more re-usable options
- Wrote several months of new menus, drawing on customer favorites over the past 2 years and dishes that highlight the best produce of the season
- And!! Designed a whole new, rather ambitious approach to the monthly Pantry menu- *launching this week!*

As much as I love doing all those things, it still feels like my happy place to be back in the kitchen on Monday morning with , cooking away and dancing around to K-Pop in the kitchen. Here’s some of the dishes we’ve whipped up the past two weeks:

- Zucchini, Corn, & Edamame Succotash with Pasta
- Achiote Brown Sugar Salmon with Red Cabbage & Quinoa
- Cucumber Buttermilk Gazpacho
- Cilantro “Ceasar” Salad with Pumpkin Seed Croutons

Hello there world! It’s not often that I take the time to introduce myself, but this seemed an appropriate time: celebrating the 3rd anniversary of Personal Chef Vienna!

I’m Chelsea, a French-American chef living in Vienna, Austria. I’ve been know to get stupidly excited about beautiful ingredients, nerd out over food science, and I love reading cookbooks when I’m hungry.

Something you may not know about me: I’m a self-taught chef, and worked in tech marketing prior to Covid. My passion has always been cooking and eating (in equal measure), but it wasn’t until the lock downs that I ever considered a career in food. One thing led seamlessly to another, in that miraculous way that sometimes happens, and in 3 short years my love for food has developed into two businesses:

• Personal Chef Vienna, offering a weekly meal subscription and small-batch, high quality convenience foods via a Pantry web shop.

• A Familiar Feast, offering fresh and diverse pop up menus and dining experiences. (Follow to stay in the loop!)

Now I get to be one of those annoyingly happy people who love going to work so much they never shut up about it.

My favorite culinary holiday of the year is just around the corner: Cinco de Mayo! For the past two years I’ve spearheaded a big Take-Away menu pop-up with , but this year we are ready to party. 🥳 Alongside our usual takeaway menu, we are staging an all-you-can-eat Taqueria at . Dear friends,

I am very excited to officially launch and open ordering up for the newest facet of Personal Chef Vienna: the *Pantry*.

Personal Chef Vienna Pantry is designed for individuals and families who would like the convenience of a high quality, ready-made gourmet meal - but don't necessarily need it every day.

Every month I'll be releasing a menu of 5 meals or food items that keep exceptionally well in your freezer, refrigerator, or pantry.

Everything is:

- Designed to keep well for up to a month
- Can be portioned for 1-4 people
- Can be modified to match omnivore, vegetarian, low carb, and gluten free diets
- *AND* every purchase from the pantry will be matched with a donation to a local food pantry

This month we have a range of French classics - 3 meals for stocking your freezer, and 2 items to round out your fridge.

- Beef Bourguignon
- Cassoulet
- Hachis Parmentier (think French Shepherd's Pie)
- Smoke Trout Rillettes
- Black Olive Tapenade

Hey friends! This coming September marks the 1 year anniversary of Personal Chef Vienna! 🥳

To celebrate, I'm opening up 5 new spaces on my client list for anyone who wants to give the service a try.

Here is how it works:

- You sign up for the weeks you want deliveries, and on those weeks you receive a menu of 5 freshly cooked, gourmet dishes, ready for you to eat and reheat whenever you want.

- Altogether the weekly menu will give you an average of 4-5 meals per person.

- Cost is €95 per week for an Individual subscription, €180 for a Couple subscription, and custom pricing for families with children.

One of my favorite projects of the last months: Beetroot Cured Salmon.⁣

Started with beautiful salmon filets, liberally covered with a salt-sugar-spice combination. Then both sides were covered with shredded beetroot, a layer of dill, and tightly wrapped to cure for 3 days. ⁣

The final product: a gorgeously magenta and coral cured fish with subtle earthy, floral, and sweet notes. ⁣

The salmon was the star of yet another salad favorite: chunks of citrus, shaved fennel, cucumber, and pistachio with a creamy balsamic dressing. ⁣

Personal Chef Vienna is a weekly meal subscription plan designed to relieve the pressure of cooking from your busy life.

Subscriptions run on a monthly basis and are designed for Individuals (€95 per week), Couples (€175 per week), or Families (customized pricing).

With the subscription you will receive a weekly delivery of 5 freshly-cooked dishes, which you can mix and match to make 3-5 full meals per person (the amount of meals you get from it depends on your appetite!).

Every Sunday you will receive an email with your menu preview for the week, and to confirm delivery details as needed.

On Monday I start cooking, and delivery takes place on Tuesday afternoons. The food comes packed in disposable, recyclable containers in an insulated cooler bag, along with reheating instructions and a menu card with "notes from the chef" on the dishes you are receiving.

The next week we'll exchange your empty bag for one full of food.

Dear Friends! I am so excited to announce the launch of an FFFF off-shoot I've been working on over the summer: Personal Chef Vienna.

Personal Chef Vienna is a weekly meal subscription plan designed to relieve the pressure of cooking from your busy life.

Here's the quick rundown on how it works:

1. Sign up for a subscription - designed for individuals, couples, or families with children.

2. Receive a menu of 5 dishes each week, equivalent to 3-5 meals per person (depending on how much you eat!) that you can reheat or eat at your convenience.

3. Menus feature fresh and healthy meals, designed to meet a range of dietary needs without sacrificing or compromising on flavor.

To celebrate the start of this venture I'm doing a soft launch in September with a special offer:

- Try out a Personal Chef Vienna subscription for 3 weeks

- After the 3-week trial, you are welcome to cancel or continue on a monthly basis. If you decide to continue, your subscription will remain at the discounted soft launch price.

- September soft-launch prices:
€85 per week for individuals (normal price: €95 per week)
€155 per week for couples (normal price: €175 per week)
Custom pricing for families with children

- Meal delivery/pick-up dates: Tuesdays, Sept. 7, 14, and 21.

- Accepting a maximum of 10 clients
