So, we all know this is low season in Miami. For some unknown reason June onwards, Miami event scene takes a nose dive. Restaurants close down or reduce their hours of operations during this period, F&B staff takes off (much needed I must say) chef’s go on vacay (yeah!! 👏🏼👏🏼)
That being said, it does not mean we are not working on perfecting our craft and grinding behind the scene still. I am taking this opportunity to work on some new recipes & perfecting some old ones! And here is one such!
Big shout out to our amazing purveyor Anthony from for providing us these gorgeous jumbo scallops used for creating this amazing dishes! And to my dear friend for capturing my work so beautifully!!

Never in my wildest dreams did I ever thought that one day I will be harvesting grapes in Miami and that too in my own garden!! 😳
But honestly, I feel there is no limit to what can be grown here, though making them survive is a whole different story and maybe I will post on it soon!
Throw some rocks and even they will grow! Maybe I should try throwing some Benjamin’s and see what happens? You never know with Miami!! 😁😁

Anyone who has lived in Miami long enough knows getting a gourmet blend of mushrooms is challenging even in winter months. This has always been my biggest grief since I started working in Miami. Mushroom is literally the first protein that comes into my mind when someone says the word VEGAN! But my prayers were answered when I bumped into now one of my fav farmers Joseph & Tawna from
They brought us these gorgeous crowns of shrooms in varieties rarely seen in most gourmet stores! And I mean look at the size of the Oyster I am holding??
Unfortunately in the rush of the moment, we could not take the pictures of the finished dish that I was working on, as they went straight from the pan to the tummy in less than 5 secs. But at least, you get to see these beauties & me of course 😉

How you plate your food can totally change how your guests are going to perceive the dish. I did a small social experiment this weekend ( yep I had way too much time on my hand 😼) Same dish, same cut of meat and same garnishing served twice to my family and both time their reaction was totally different. First I served it in the simplest way possible and next it was served like here in this picture. Without anyone knowing that it is the same dish. They could not believe it was the same dish!!
Point being, we are visual beings. We eat from our eyes first before we even taste or smell the food. Half the battle is already lost if the dish is not appealing in the way it is served.
Served here are beef steak and my signature sunshine puree with micro greens, edible flowers & pickled radish. Enjoy with your eyes for now, taste it at your next event when you book us 😉

Our mushroom risotto is always a showstopper! But this past week it was extra special because we get to use some of the most delicious and difficult to find mushrooms in florida. With the support of our amazing supplier who brought them for us on a last minute request. Thank you for having our back Tawna & Joseph 🙏🏻
Needless to say, every single grain of this dish was gone from the plates!

We don’t talk about Bruno or Jada( All puns intended ) but can we speak about the charcuterie boards? They have long being part of almost every french home’s APERO time, but recently they have become an essential, must have in every party. Reason being it offers something for everyone. From sweet to savory, from picnic baskets to corporate graze boxes you can custom them to your hearts desire.
Personally, I like to keep my boards small & sweet, unless we are skipping a course ( which to be honest, why would you? if you are hiring a private chef) Because people get full on these little nibblers and later your glorified mains will sit diddly doo.. What’s your take on them? Drop a comment if you love these boards just as much as we do..

There is something in this humble dessert that catches the attention of our client repeatedly. Now is it the soft but firm texture or is it our secret homemade dark caramel drizzle??
