The meat sauce of your dreams.
Chef Pat’s Ragú di vitello, maiale e cavallo is derived from a recipe that he brougth back from southern Calabria years ago. Like it’s name might have indicated, it’s made with nagano pork shoulder, milk-fed veal shoulder blade and inside round horse steak! San Marzano tomatoes and fresh picked basil round out the sauce beautifully to make for a perfect partner for the mozarella di buffa, the buffalo mozzarella! The ONLY mozarella that matters.
