I love carbs, we know it--but there's something about straight meat and veg that's incredibly satisfying. This pan seared Coulotte steak topped with chimichurri was an inexpensive delight on top of simple roasted summer squash and zucchini.

You guys, guess what?! Unfolding Lovely Eats will be offering a Summer Lunch Program to everyone this summer! Well, everyone who's local—sorry, faraway friends.

We know it can be a burden for busy families to think about lunches during the summer months when school is out, and summer camps are in session. The great news is that we don't find it burdensome at all. In fact, we LOVE summer lunches!

I'll create a menu—one for littles and one for bigs. The little lunches will be served cold only and will include a main, fruit or veg, a snack, a sweet, and a drink. The big lunches will be meal-prepped lunches meant to be warmed in the microwave and will include a complete entree (protein and sides or salad with protein or whatever we come up with).

Little lunches will be $50 per week and Big Lunches will be $60 per week.

I tried making a risotto type dish with cauliflower, quinoa, other super grains, and a bit of cream cheese. What I learned was: it doesn't work--ish.

And also that it does work--ish.

For dinner tonight, I enjoyed a silky, salty, protein packed dinner that was sorta like risotto but really a delectable quinoa/super grain dish cooked kinda traditionally and also not really. 😂

Roasted Cherry Tomato Sauce is simple, delicious, and makes so many things just a little better.

Preheat oven to 425. Line a baking sheet with parchment.

Wash and pat dry 1-2 lbs cherry tomatoes, and then cut them in half. Toss in a bowl and drizzle with olive oil, kosher salt, freshly cracked pepper pepper, freshly crushed garlic, and oregano -- this is all pretty specific to how much flavor you want.

Roast for about 30 - 35 minutes until they're soft, juicy, and a bit charred. You can use them as is, blend for a really creamy texture, or an emulsion blender (my choice) for a slightly chunky sauce.

We're experiencing something terrible in the DFW--winter weather; snow to be more specific. Gross.

To bring a little bit of joy to this sad, sad day--let's create something new! I've done banana French toast a few different ways, but this is different from the others and it was so good. I wanna teach you!

Take one super ripe, almost too ripe banana and mash it in a shallow bowl. Add one egg, a splash of half and half (or heavy cream or milk), smaller splash of vanilla, a pinch of cinnamon and mix well. We want most of the banana lumps gone.

Heat a large skillet with a glug or two of coconut oil over medium heat.

Dip a slice of brioche bread into the egg mixture and coat well on both sides. Add to skillet. This should be enough for 2-3 pieces of bread. Cook for about 3-4 minutes and flip. Cook another 3-4 minutes and remove to a plate. If making several batches, place a 275 degree oven to keep warm while the rest are being cooked.

Serve with sliced banana, fresh berries, powdered sugar, maple syrup, or whatever you like. The banana from the coating just barely caramelizes and it's so good even with nothing on it. Try it! 🧡🧡

I hate taking tests. I'm no good at it and I procrastinate doing it. The perfectionist part of me struggles because I might fail or not be perfect or not be good enough.

Then, I remind myself that I'm a *recovering perfectionist* and I can't avoid tests. I've had to reup my certification since November, and I just kept putting it off.

Well, well... I collected a sweet 93%.

Y'all, do the things. Whatever is standing in front of you--just do it. You might surprise yourself.
