I sauteed garlic in my infused olive oil to blend into the artichoke, sundried tomato bruschetta and boyyy let me tell you that bruschetta is fire!
It's currently marinating in the fridge while the polenta chills in the freezer, pics coming soon.

I made the polenta using Bob's Redmill polenta.
It was cooked in a mixture of water and unsweetened organic soy (I reduce dairy wherever possible.)
I threw some garlic salt, pepper, and dried onion in while it boiled and tossed in a cup of parmesan once it cooled a bit.
Now it's been rolled in parchment paper where it will set in the freezer until it's ready to be sliced, fried and served with some of the sauce that's been cooking for the last day!
The flavor of the polenta will go beautifully with the sauce.
Polenta is a super easy Italian classic that is best when made fresh!
I can't wait to serve this up and get some reviews on my first products!

Phase 3 complete!
This beautiful, aromatic sauce has been through hours of preparation.
We started with fresh produce and finish with a smooth and bold puree of tomatoey goodness.
In this sweet yet savory pasta sauce, you'll get a healthy dose of veggies and fruits.
(Tomatoes and bell peppers are fruits, you know!)
Ingredients include: onion, red bell pepper, garlic, multicolored cherry tomatoes, sundried tomato, infused olive oil, parsley, basil, apples, vegetable broth and spices.
I used salt sparingly because the sauce is incredibly flavorful on its own.
The recipe is vegan, but don't worry, most tomato based pasta sauces are.
This is a very versatile sauce!
It can be enjoyed with pasta, meat or alternate protein, parmesan cheese and of course, garlic bread.
It can also be used in other classic Italian recipes such as stuffed cabbage or lasagna.
The final phase includes jarring the sauce.
It will be stored in the freezer and available soon!

This beautiful cherry tomato sauce has been covered and simmering on low heat overnight and is ready to be emulsified.
The slow cook method is perfect for marrying the richness of sundried tomato with the sweetness of red bell pepper and apple.
If you want the most flavor, cook it low, cook it slow!
It's already so savory and sweet.
Once it's blended, the onion and garlic can really do magic.
Emulsified sauce is always the best option in my opinion for full bodied, balanced flavor.
This robust beauty is packed with fresh ingredients and herbs and will go perfectly over angel hair pasta, stuffed peppers, shells with ricotta, thin, breaded chicken cutlets, or in a baked penne or ziti.

I'm cooking up my first batch of sauce.
It already smells so amazing!
It's going to be an Italian style marinara with a twist.
First I infused my own mixture of robust and cold pressed olive oil with sundried tomato oil, fresh parsley, garlic and onion.
I always sweeten my sauces with fresh fruit.
You can't taste the fruit in the final product but it adds a healthy, nutrient rich alternative to processed sugar!
I usually use plum or pear, but today I am using organic honeycrisp apple.
I love cooking with fresh herbs like parsley or basil.
You can expect plenty of fresh, sauteed garlic!
The cherry tomatoes are so sweet and red bell pepper adds that extra punch.
The finished, emulsified product is smooth, flavorful and kid approved.
I cook with a slow simmer process, but this sauce will be so worth it.

Featuring Pineapple and Orange Butter Curry!

This was a wholesome, kid friendly meal that fills the belly and powers the body in a pinch!
A good homemade sauce on hand can really speed up dinner and leave you feeling assured that your family is getting lots of nutrition out of a meal.

It was simmered with sauteed chickpeas, roasted garlic and Gardein vegan chicken strips over Jasmine rice.
A simple cheese quesadilla was served on the side for a quick and satisfying meal packed with lots of hidden vitamins, spices, veggies and fruits!

Jarred, homemade sauces will be available soon! We are still reviewing and testing out my best recipes. You can check out Aura and Sage's sauce reviews on my page!

*Please don't mind the disposable plates, I'm still in the process of retrieving some of my good kitchenware from storage.

Food Reviews by kids! Episode 2!
The kids are the first to tell me if they do or don't like something so they've been assigned with the duty of testing out my sauces.
Tonight's meal features Pineapple and Orange Butter Curry Sauce, loaded with nutritional ingredients and traditional Indian spices!
It's an experimental recipe that I personally thought came out delicious!
For dinner I sauteed some chickpeas and Gardein vegan chicken strips with roasted garlic. I simmered it all in the sauce while some jasmine rice cooked.
The curry was served over the rice with a simple cheese quesadilla on the side in lieu of Naan.
Here's what the kiddos thought!

I've hired my first employee!
I'd like you all to meet one of my taste testers.
She's a bit of a picky eater, so satisfying her palate has taken a few years of mastery.
If it gets the Aura seal of approval, you know you're getting good stuff!
Aura loves to help me cook and is pretty good at navigating the kitchen.
She's very particular about tomato sauces and will be helping me select the perfect recipes to share.

It's all in the sauce!
I whipped up a batch of slow simmered, chunky, orange bell pepper marinara and used it for a quick and delicious vegetarian meal.
For dinner I simmered 4 cheese tortellini in the sauce with a splash of veggie broth until it became tender.
I also cut in half and sauteed some Gardein brand vegan meatballs in olive oil and tossed those in too, then finished it with a light sprinkle of parm.
When you have a great sauce on hand, dinner can be so simple!

I'll soon be offering my first batch of jarred sauces.
I make all of my sauce from scratch using fresh ingredients and I'm confident it'll knock your socks off!
A good marinara was the first thing I learned how to prepare and I've spent a great deal of my life perfecting it.

Hey y'all! welcome to my Catering page!
Here are some fun facts about me.
I've been alive for 30 years so far.
I have two beautiful children and one on the way!
I've always loved to cook.
I come from a family that was built on bonds made at the dinner table.
Delicious food and classic Italian cuisine is my happy place.
Becoming a mom has really expanded my horizons and pushed me to be the best I can be.
From composting my own produce to making my own baby food, I've learned a lot about food.
I can't wait to see how much more I can learn and grow in the culinary field!
I make a variety of goods and am always creating something new.
Although my menu is not strictly vegan, I was vegan for nearly 5 years.
During that time, I learned lots about plant based alternatives.
I even wrote my own vegan cookbook with recipes inspired by cultures from all around the world!
Sadly that material was lost to water damage before it was ever published.
All the good stuff is still in my noggin though!
I've been on a quest to find my calling.
Somewhere along the way, I realized I was spending so much time in the kitchen preparing meals for my family that I was putting aside other work and activities.
My kids love to be part of the process, it's how we bond!
It occurred to me that cooking IS what I want to be doing, it's what I love!
I find peace behind a stove and enjoy the process from shopping to chopping. (My first employee will be a dishwasher though. 😂)
I especially like being in charge of holiday meals and food for get togethers.
It gives me a purpose and makes me feel like I'm doing something good. I cook with love!
I'm that crazy lady who will stare at you until you take your first bite and say "mmm!"
I adore feeding people, cooking for friends and sharing my craft.
Now I want to build something that will not only give my kids roots to grow from, but it will also fulfill me and give back to others at the same time.
I'm really excited about this, so let me help you feed your crew!

I can do customized snack trays, fruit, nut and veggie trays, pasta salads, potato salad, tomato salad, all different kinds of salad, various bite sized finger sandwiches, sweet platters, dips, cheese & cracker spreads with all the marinated and pickled fixins, plus more! We can get creative!

Here is a list of some of the platters/trays I can prepare for your upcoming party or event!
I'm currently offering picnic style foods that don't need to be heated, but I have a ready-to-heat menu in the works for family dinners etc!

*Most of what's on the list can be made vegan or vegetarian minus the stuff with Salmon.
I can prepare vegan sour cream for dips when needed, use vegan deli slices as an alternative to deli meat, etc.
I highly recommend trying my Vegan Cajun Pimento Cheese which is always a huge hit!
Peanut Butter can be substituted with Sunflower Butter where nut allergies are present

These are all my recipes, classic combos, or my fave recipes passed down from family.

Loaded Italian Pasta Salad (omg so delicious)
