Calamansi is a type of citrus native to the Philippines. I used @saintc_ph Calamansi juice because I couldn’t find the calamansi.
I know you guys don’t like making your own tart shells because “it’s too much work” Well, I gotta tell you, this tart is worth the effort. And rolling pastry can actually be therapeutic! Let me know in the comments below if you want the recipe.

Like I said, I’m going back to my Filipino roots and cooking more Filipino food. Here, I’m preparing smoked milkfish spring rolls or “lumpiang tinapa”. Spring rolls are called lumpia in the Philippines and smoked fish is tinapa.

Escabeche is the Philippines’ version of sweet and sour fish. It’s normally served with a whole fried fish but I’ve opted for a side of red emperor instead.
Grill/bake the fish instead of frying and it will be perfect for dinner on a beautiful spring day like today.
