Elements Music Festival 2024 Poconos PA is likely going to be the event of the season. Many headliners with solid followings. Last year was my first time vending it with BillYum's Bites and it was my second best show of the year, the lineup wasn't anywhere near this either. This year we will be at the Main Fire Stage, on my birthday as a Leo a fire sign. Feels very serendipitous. And there is a possibility of a campground spot so I can launch my concept Festy's Best Breakfast Bar. I'm beyond stoked. Wish me luck and if you are in Pa consider coming.

Do I have any friends in the Cincinnati area that would like to work Paradise Music & Beer Festival with BillYum's Bites. It's not going to be a huge one so I don't want anyone traveling far for it. But if I knew anyone in the area that wanted a little work please give me a shout.

BillYum's Omelet
Mince Garlic, Dice Red Onions and different color Bell or Sweet peppers (different colors are more for complexity of color than anything else, if I have a choice of one it would Red or Orange bell peppers)

Sauté minced Garlic, Onions and Red & Green Bell or Sweet Peppers in butter in a Medium sized frying pan on medium adding the vegis 45 seconds apart in the order written above. Turn down to medium after bell peppers have cooked for 60 seconds. Add a couple dashes of ground mustard seed.

I used 3 eggs in this and it was bordering on too much so 2 is fine but I'm hungry.
Whisk eggs vigorously adding a teaspoon of water and a teaspoon of half and half or heavy cream.
Add desired spices. I used a 1/2 a teaspoon of pink salt, garlic pepper, and black pepper. Whisk in.

Add eggs carefully as not to spread push vegis around, you have about 15 seconds to spread them evenly before you start making a scramble if you do.

Add shredded mozzarella and shredded asiago even to your desired cheese level.

Cook on medium until the edges start to solidify, you can play with the temperature but don't cook them too high or it will burn. Be patient.

Using your spatula, carefully separate the ends of the eggs from the pan. Preparing for the fold.

Fold carefully, if it starts to tear let it cook longer and start from another end.

Let cook 60 seconds or so on each side.

Slide off pan to plate and decorate at will.

I used my signature Key Lime Honey Sriracha to decorate and finish.

Eat!

Fair starts at 10am and goes to 330 followed by Crazy Fingers playing at 4pm which many of us vendors will be sticking around for. It will be my first event of the year and I will be serving some special new goodies.

BillYum's Bites has finished our festival season.

We are looking for local southern florida gigs to fill the off season:
House parties, business events, weddings, any large gathering really. Food can be cooked onsite, in either an outdoor kitchen (which is entertaining for guests) or a kitchen onsite, as well as prepared before hand and delivered. (Conch fritters do not really work for this as the are best right after they are made)
