Burning the midnight briquettes. Brisket on for a long night of cooking. The pan is some of the trimmed fat that I am rendering down to pour on the brisket when I wrap once I hit the stall.

First cook since making this page. 3 breakfast fatties (in the pan) and one hamburger log.

The fatties are for a work breakfast tomorrow and the roll up is for dinner tonight. Precooking the fatties now so I can wrap and throw them in my chest smoker to warm them up before work. The overall work is easy but I’m struggling with the rolling part. That will come in it’s own time. Right now I worry about taste, presentation will come.

I still have a great deal to learn and apply but every journey starts with a single step…

Hopefully, the start of something big. Everything right now is in its infancy but I feel this could be the first step of a major journey.

Eventually the videos will get better but all things in time 😁.
