Salmon Wellington: Elegance Made Simple
Here is a way you can impress your guests with a healthy dish, simplified to feed plenty, stress-free, and feast!
Ingredients:
1 fresh salmon fillet (about 2.2lbs) leave the skin on
Sprinkle salt and pepper to your taste.
A good amount of olive oil to give a bit of sizzle
½ a handful of mushrooms, finely chopped
Shallot, finely chopped
2 tablespoons of butter to enhance the flavor (for those who don't use butter, you can substitute with olive oil)
A splash of dry sherry (optional)
Fresh thyme (don't be scared to use the stems for a flavor boost)
1 sheet puff pastry, to embrace its destiny
A light dusting of flour
Egg wash (1 egg and 1 tbsp water)
If you like, you can include creamed spinach; Dijon mustard, and parsley!
Lets cook:
Preheat oven to 200°C (400°F).
Season salmon, sear skin in oil/ bake for 10 to 12 minutes. Rest, and then flake.
Sauté your mushrooms and shallot in butter/olive-oil, (try a bit of sherry & thyme it up).
Unroll pastry, spread duxelles, gently roll & pinch.
Brush with egg wash then bake for 30 mins for golden top.
Rest, slice, and savor the dish!
Chill before baking and don't forget the sides!
