Hello friends! It’s been a hot minute but I did a dinner the other night and wanted to show the main entree. Roasted rack of Elk with a Sage-Cranberry demi glacé, braised fingerling potatoes in duck fat, sautéed forest mushrooms. On top is a seared radicchio salad with toasted pine nuts, pancetta with a pomegranate-balsamic vinaigrette. Great people and fun was had by all! Cheers!
