Season with your preference. Low smoked at 200°F for one hour, then crank the temp up to 275 and smoke for 15 mins to crisp up and put at internal of 170°F. Most important tip? Use good quality pellets!! We always use Bear Mountain BBQ for all our bbq needs! For this cook, we used cherry pellets, which really enhance the flavor of the wings without overpowering. Smoked at 225 for 2 hours with gourmet pellets from Bear Mountain BBQ ! This batch consists of 14 Roma tomatoes, half a head of garlic, 5 medium sized jalapeños, 1 and a half medium white onion, half a lime, cup of cilantro, 2 tablespoons of salt, 2 tablespoons of accent food enhancer. Yielding 3 Mason jars.

These were smoked at 275° for an hour and a half and we used Bear Mountain BBQ bold flavor pellets!
Something a little different! Smoked oxtails with homemade gravy from the juices the oxtails were smoked in and smoked jalapeño poppers!
Smoked at 250 for 4 hrs, then braised, covered and smoked for an additional hour to get fall off the bone tenderness!😋

We let this ham sit in a brine for 8 days & then smoked it at 225 for 10 hrs!! It also had a honey dijon mustard glaze that paired beautifully with the smoked meat!

Smoked surf n turf using Bear Mountain BBQ oak pellets & yes that is lobster mac n cheese! 😍😍🤤
Steak was smoked @ 180° for an hr until it got an internal temp of 110° it was then removed and the temp was cranked up to 450°. Lobster and shrimp seasoned with cajun rub butter put on for 10-12 mins. Steak was seared to an internal of 125°.
