Sri Lankan Coconut & Cashew Chicken with Saffron Rice
Ingredients:
2 tablespoons vegetable oil
750g chicken thigh fillets, cut into 3cm cubes
150g green beans, trimmed and halved
165ml can coconut milk
1/2 teaspoon saffron threads
1 brown onion, finely diced
2 garlic cloves, finely chopped
1 cup basmati rice, rinsed
1 bunch coriander, sprigs removed
1/3 cup cashews, roughly chopped
1/4 cup toasted flaked coconut
1 tbsp curry paste - your choose the heat
1tbsp garam masala

Method:
Heat 1 tablespoon oil in a large non-stick frying pan over medium high heat. Add chicken and cook for 8 minutes or until browned. Add the curry paste, garam masala, cashews, coconut and a some of the coconut milk. Reduce heat and simmer curry for 15 minutes, adding beans for final 5 minutes, or until chicken is cooked through. Stir coconut milk through curry.
Meanwhile, place saffron into a small bowl and cover with 2 tablespoons boiling water. Stand for 5 minutes.
Cook the rice as per the packet instructions and then add saffron and 2 cups water. Bring mixture to the boil, reduce heat and simmer for 8 minutes. Remove from heat and cover. Stand for 5 minutes. Roughly chop half the coriander and stir through rice. Season.

Meatballs or as the Danish call them Frikadeller! Quick, easy to make and wonderfully tasty. This Danish staple is great for the kids or a quick comforting supper with a beer.

Frikadeller:
3/4 lb ground beef
1 lb ground pork
1 onion large, grated or chopped finely
1/2 Handful of breadcrumbs
4 Tbsp flour
2 eggs
1/2 tsp salt
1/4 tsp pepper
1/4 tsp. nutmeg
2-3 cloves of garlic
1/2 tsp. chopped sage leaves
Splash of milk for consistency
Butter

Gravy:
2 Tbsp drippings from Frickadellers, a little butter if needed
3 Tbsp flour
100ml Double Cream, Milk works too
1 Tbsp. beef bouillon
Salt & pepper

1. Combine beef, pork and onion. Add breadcrumbs, flour, eggs, salt, pepper, nutmeg, garlic, and sage leaves (it works best if you mix it with your hands).

2. Slowly add milk for consistency (you want them to be slightly sticky, you shouldn’t be able to form them into a perfect ball). Coat large skillet well with butter. Drop clumps of mixture (a heaped tablespoon-size) onto the skillet.

3. Fry on medium to medium low heat until brown (press the meat down a lightly with a fork so it flattens out a little.. it should look like a fat hamburger then flip (approx 3-5 minutes per side). Add more butter with each batch.

4. Serve with gravy **Don’t wash the skillet– you will want the brown bits and drippings for the gravy**

For the gravy:
Add the flour to the drippings to form a roux (add butter if needed). Slowly add cream (or milk) until mixture reaches gravy consistency. Add beef bouillon, salt & pepper to taste.

Sweet and Salty Spanish Skewers

Ingredients
6 ripe peaches - a small bunch of basil - a packet of serrano ham

Method
Slice the peaches into chunks. Wrap a basil leaf and a slice of Serrano ham around each peach slice and put a small cocktail stick through each. If you want to get fancy grill the peach slices for a deeper flavour then assemble.

What do George Clooney and Italy have in common? They are both hot, chic and gorgeous of course. To up the chic in your life, try this northern Italian classic cocktail an Aperol Spritz.

Ingredients:
Plenty of ice
Aperol
Prosecco
Soda
An orange slice

Fill a large wine glass with plenty of ice. Add 3 parts Prosecco. 75 ml, then 2 parts Aperol, 50 ml, a dash of soda, 25ml and stir briefly. Garnish with an orange slice and enjoy!

Disney and Hemmingway are an unlikely duo but in Florida everything thing is possible. A great family destination, so why not try my Key West Chicken to bring a taste of Florida to your BBQ or grill at home?

Key West Chicken

Ingredients
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breasts

Method
In a dish, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Score the chicken with a knife then place into the marinade, and turn to coat. Cover, and marinate in the refrigerator for at least 30 minutes. Overnight is better.
Grill chicken 6 to 8 minutes on each side, until juices run clear.

Summer Holidays and we love to travel, so over the next few weeks, look out for my simple recipes from around the world. Today Greece, fabulous fresh food, here is my simple Tzatziki recipe, easier to make than say and simply delicious.

Tzatziki
Ingredients - half a cup of cucumber, peeled, de-seeded and grated
1 large garlic clove - minced
1 tbsp olive oil, extra virgin if you can
1tsp red wine vinegar or lemon juice
2 cups of Greek yoghurt
Salt and Pepper

Method - put the yoghurt into a bowl. Squeeze the cucmber in a teatowel and remove as much juice as you can, add to the bowl. Add the olive oil, garlic and vinegar mix together the chill. Now eat with dips, salads or anything you fancy. Soooooooooo goood!

It's Monday, what better way to start the week than with something sweet, juicy and a little bit tart! Try this very simple recipe for pickled cucumbers. Think the pickles you get in a well known burger, but a whole lot better. Great with cheese, slipped into a burger or straight from the jar.

Recipe

Small cucumbers or one large chopped into slices, put in a jar, add 1 teaspoon of sugar, some herbs, dill is great or for a kick a fiery chilli. Top with white vinegar and leave in the fridge overnight. Eat at will.
