It started getting serious after a fishing trip to the west coast with my dad & son. There was a lot of Salmon that needed smoking! I bought a smoker and that was the start. hasn’t cooked a turkey in the oven for about 8 or 9 years now. Bought another smoker, took a class or two in Calgary, BBQ’d for the guys on my construction site. Wanting to take my skills up to another level I decided that in order to learn good southern BBQ, I needed to go south! I enrolled in Jack’s Old South Cooking School with Myron Mixon in Unidilla, Georgia. It was fantastic! We basically bought a BBQ right there and had it shipped home. Our BBQ is mounted on its own trailer for mobility. It’s 1500 lbs. of BBQ-Smoking magic with 31sq.ft of cooking area so we can cook up a lot of meat! Our BBQ is wood fired only, no charcoal, no pellets, no gas, no gimmicks, old school. With a water pan the full size of the BBQ over the fire and under the food the cook chamber is incredibly moist, this combined with the wood fire offers a unique, incredibly good, juicy & moist taste. Our wood is real Oak we get from Manitoba. Oak is one of the hottest burning woods, as a result it burns cleaner and gives a milder, gently smoke. We make all our own sauces, rubs & injections. We buy our meats locally. We are available for events as well as private functions. Our food is traditional BBQ, very simple…..but really good!
