Did some Fried Escovitch Snapper and Bammy for a small group yesterday....
If you are not familiar with "Bammy"- It's made from the root vegetable cassava. The cassava is grated or shredded, then the pulp is squeezed to remove liquid. The dry pulp is then shaped or pressed into a round disk and baked. It can fried or steamed and it's generally paired with fish but can be served with other dishes.
