My grandparents, my muses ✨ Campesino is an homage to where we came from and in essence a central experience shared by all people ~ through food we can connect with each other in profound ways. Cooking paella is symbolic of this. A simple yet transformative dish, cooked as it has been for centuries; outside, over an open fire, smoke billowing, surrounded by eager hungry participants. Rustic and soulful. Poetic and humble. This is the food of our people ~ Sicilian, Spanish, Moorish heritage handed down through generations ~ Never forgetting that we are our ancestors wildest dreams and that we are part of a continuum with no beginning and no end.

Food ✨Alchemy: Paella is all about process. This begins with selecting the best ingredients, understanding how they interact with salt, fat, acid, heat - an alchemical process of wood-fire on pan to coax these elements in unison 💥 the result is a dish bursting with flavor. The whole process is satisfying to me - start to finish made with love and intention.

If you need a quick last minute recipe for your gatherings today.. Try out Campesino Romesco! It’s vegan, quick and delish with just about anything!
-Toss a two large red bell peppers, a couple sweet cherry tomatoes and a clove of garlic in EVO sprinkle with flake salt and roast until slightly charred. (I often use a grill or wood fire 🔥 to make this recipe)
- Put all the yummy roasted goodness in the food processor with a handful of roasted salted almonds (sometimes I’ll use Marcona) add a third cup of olive oil and a splash of sherry vinegar, a pinch or two of sweet paprika, and a few red pepper flakes. Blend until smooth. (Sometimes I add some fresh parsley 🌿 in at the very end)
- Let chill in the fridge until ready to serve! 💃🏽💃🏽💃🏽

It’s HOT and It’s practically happy hour anyway… my go-to lately has been and aromatic Bitters and Soda, made with Gentian herb tincture. Pour over ice and add a sprig of rosemary. SUPER refreshing but also feels like fall! Try it out.. let me know 🤩 favorite happy hour partner, even with the bebe abordo ♥️

My Nephew is one of my all time favorite dinner guest 🤩 and BOY knows how to eat! Teddy was born a total foodie and it’s not surprising at ALL.. el hijo de Tigre, tigrito! TOOLS 🛠 Cooking on-site always has it’s unique challenges, which is what makes it such an experience, guests are fascinated with my cooking tools, especially my pit🔥 After testing many, many types of pits quickly became my go-to. It’s light but extremely sturdy and if anyone has ever camped with one, it is the most efficient design for burning all types of wood/kindling! I retrofitted my Yukon, which is the largest model, to allow my pans to sit high enough for air flow and to feed the fire while cooking. With a few lumber straps from our local hardware store, the pit is a beast of a workhorse! As I continue to explore my relationship to wood fire cooking my tools seem to evolve with the process... I think of it as part of the alchemy. We are attracted to it because it’s so deeply a part of our human experience 🔥
