The first thing you need to decide when choosing a wedding cake is its type and appearance. What will be the main decoration of the banquet? The wedding cake can be rectangular, oval or more usual round, made of one or more cakes. However, the most popular is a multi-tiered cake made of sponge cake, cream and sugar paste.
Cake with cream. Tender sponge cakes and creamy cream between them - it's so appetizing! As a cream, you can use whipped cream with fillers (mascarpone, fruits, berries, cottage cheese), classic butter creams with filler, mousses, etc.
An open cake is a simple and concise design for a home and soulful wedding. As a rule, this is a small cake consisting of several open cakes with cream, decorated with berries and fruits between the tiers.
Souffle cake. Such a cake will be light and at the same time dense in consistency. Souffle can be multicolored and with different additives (cottage cheese, yogurt, bird's milk).
Cake with mastic is a more traditional option for a classic wedding. Usually such samples are decorated with icing - a pattern on tiers, berries, flowers and other decorative elements.
Please note that the total weight of such a cake will be more, since the mastic weighs quite a lot, and it will taste sweeter than a cream cake.
Marzipan cake. Marzipan is a mixture of grated almonds and powdered sugar. Such cakes are not decorated with fruits or berries, as the juice destroys the marzipan. Marzipan skin, like mastic, makes the cake smooth and elegant, but it cannot be used to make decorations and details for the cake.
French croquembouche is a tall cone-shaped dessert made up of individual cakes, for example, profiteroles, and held together with caramel. Instead of profiteroles, cupcakes or individual portion cakes laid out on a multi-tiered stand in the form of a wedding cake can be used on such a wedding cake.
