Here’s my crispy pork belly with yellow watermelon pickled and coconut water Thai chilies ginger and agave. I served it with cucumber pickles three ways And a Nuoc chom sauce

Last night I made a white sauce pizza with Tuscan kale tossed in rapeseed oil to complainant the bitterness. Wild oyster and shiitake mushroom we got at the farmers market. Italian hot sausage, freshwater mozzarella, roasted garlic and topped with micro arugula and a micro purple basil

For lunch today I think I pulled it out pretty well. Took leftover pot roast that was made from a beautiful chuck roast we got the farmers market. Toasted some delicious semolina bread that we got at the farmers market as well from last week. I caramelize some onions and cook the roast beef with some brandy and dark chicken gel that I had made. Put it in the toaster and topped the bread with some gouda cheese then I fried some Tuscan kale And topped it off with a homemade pickles and smoked paprika aïoli. Not bad for thinking I didn’t have anything for lunch. Stay tuned tomorrow for what I make for dinner
