Bright, fresh, and bursting with flavor, ceviche is a perfect summer dish. Chef Hamlin shares his secrets for making the perfect ceviche at Kitchen 212º!

1. Fresh Ingredients: Always use the freshest seafood available. Freshness is key to a great ceviche.

2. Citrus Cure: Use a mix of lime and lemon juice to marinate the seafood. The acidity will 'cook' the fish, giving it a firm texture and tangy flavor.

3. Perfect Dice: Cut your seafood and veggies into uniform, bite-sized pieces. This ensures even marination and a pleasing presentation.
