Stuffed Pepper Leftovers
A quick and easy leftover dinner last night enjoyed by our household. Easy to make, even easier to eat. I had some turkey sausage and baked salmon left over from previous meals. I mixed each separately in their own pan as to not combine the flavors.
Pre heat oven to 350° 
Turkey Sausage Mix
Low heat skillet with avocado oil and minced garlic
Wait 5 minutes for garlic to extract juices, add chopped onions (2 minutes cooking) sausage, egg, white wine, sage seasoning, bread crumbs. Simmer 5 minutes.
Baked Salmon mix
Low heat skillet with avocado oil and minced garlic
Wait 5 minutes, add chopped onions (2 minutes cooking) add baked salmon, sq**rt of fresh lemon juice, Greek seasoning, white wine and bread crumbs. Simmer 5 minutes.
Clean seeds and cut center of peppers while food is simmering. Fill each pepper with desired mix, for non-meat eaters I had a separate pepper that was all salmon. Top with Parmesan, bake 45 minutes, the peppers release their flavors into the mix for a delicious meal. Serve with a side salad and you’re done. Quick and easy and Yummy!!!!

What an amazing and easy dish to make, only thing I added was some minced garlic for more flavor at the beginning. In 15 minutes, it’s done and so good! Served it with chicken tenderloins and a baked sweet potato. Try it tonight!! 🙃

IN JUST 15 MINUTES, YOU CAN START YOUR DAY WITH THIS FLAVORFUL COMBINATION OF CHICKEN SAUSAGE, EGGS, AND VEGGIES.

INGREDIENTS
4 eggs
¼ cup (60 mL) milk
¼ tsp (1 mL) salt
⅛ tsp (0.5 mL) red pepper flakes or hot sauce
1 tbsp (15 mL) butter
4 oz. (125 g) white mushrooms, sliced
2 green onions, sliced
1 cup (250 mL) loosely packed baby spinach
6 fully cooked chicken or turkey breakfast sausages, sliced
1 oz. (30 g) cheddar cheese, coarsely grated (1/4 cup/60 mL)
2 plum tomatoes, coarsely chopped
Optional: ½ ripe avocado, diced
DIRECTIONS
Set the Deluxe Electric Grill & Griddle to 'GRIDDLE' in the Flat position.

Whisk the eggs, milk, salt, and red pepper flakes or hot sauce, if using, together in a large bowl; set aside.

When preheated, melt the butter on one side and add the sausage to the other.

Add the mushrooms and green onions to the melted butter and cook for 2 minutes, stirring occasionally. Add the spinach and continue cooking until the spinach is just wilted. Cook the sausage until lightly browned, stirring occasionally.

Pour the egg mixture slowly over the sausage, moving it away from the drip spout. As the eggs begin to set, fold and stir until the eggs are set but still moist.

Transfer the vegetable mixture onto eggs and sausage. Sprinkle with cheese and cook in the Top Melt position until the cheese melts, about 1 minute.

Serve topped with tomatoes and avocado, if you’d like.

Guess what day it is??? Yuppers, it’s Taco Tuesday!! Here is a quick and easy fix for a hungry person or family. This is made with chicken that I smoked on Father’s Day and it is great!! (If I do say so myself). I added tomatoes, shaved onion, lettuce and shredded cheese, and mixed with our pampered chef Carnitas spice, not just a slow cooker seasoning. Cover with your favorite red or green salsa and you’re ready to eat! Enjoy!!1

Hi Everyone!! Why do people like to grill? There are so many reasons but a few of my favorites why I enjoy grilling or smoking are:

Looking for a quick dinner tonight? Try this out for the hungry people in your house.

Lemon Garlic Butter Chicken Thighs and Green Beans Skillet. This paleo, low carb, keto-friendly chicken thighs recipe is a snap to fix and cook. Chicken thighs and green beans are cooked in one skillet for easy prep and the flavor combination is spot on. With only 25 minutes of total work, this nourishing chicken meal makes weeknight dinners a breeze.

3 – 6 skinless, boneless chicken thighs
1 pound green beans, trimmed
3 tablespoons butter, divided or ghee
4 garlic cloves, minced (I love garlic)
1 teaspoon paprika
1 teaspoon onion powder
1/4 teaspoon salt and fresh cracked black pepper
Juice of 1/2 lemon + lemon slices, for garnish
1/2 cup of chicken stock
1 tablespoon hot sauce
1/4 teaspoon crushed red chili pepper flakes, (optional)
1/2 cup fresh chopped parsley

DIRECTIONS

1. To make the lemon garlic butter chicken thighs recipe with green beans: In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with the spice mixture. Set aside while you prepare green beans.

2. Arrange green beans in a microwave-safe dish with 1/2 cup water. Cook in the microwave for 8-10 minutes, until almost done but still crisp.

3. Melt 2 tablespoons butter in a large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in the skillet. Cook for 5-6 minutes then flip and cook another 5-6 minutes, until cooked through and a cooking thermometer displays 165°F. If chicken browns too quickly, lower the heat. Adjust timing depending on the thickness. Transfer chicken to a plate and set aside.

4. In the same skillet, lower the heat and melt the remaining tablespoon of butter. Add chopped parsley, garlic, hot sauce, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Add lemon juice and chicken stock and reduce the sauce for a couple of minutes, until slightly thickened.

5. Add cooked chicken thighs back to the pan and reheat quickly. Adjust seasoning with pepper and serve the lemon garlic butter chicken thighs immediately, garnished with more crushed chili pepper, fresh parsley, and a slice of lemon if you like. Enjoy! A couple of weeks ago, I hosted an online Pampered Chef Party. Hubby stole the show and said "I love this!"
I heard my Mom's voice say, "so do it!"

About 4 years ago, Donald stepped into the kitchen on a more full time basis to free me up to care for other people/things.

I'm going to tell you, he is super efficient in the kitchen! (Way more than I!) 😂

Here’s a simple and healthy meal.

Spaghetti Squash with Broccoli and chicken Alfredo

Prepare time: 20 minutes
Cook time: 1 hour 20 minutes (45 minutes for squash, 15 minutes to cool)
Servings: 4

▢ 1 medium spaghetti squash
▢ 2 tablespoons unsalted butter
▢ 1 tablespoon extra virgin olive oil
▢ 3 garlic cloves, thinly sliced
▢ 1 large shallot, minced
▢ 1 ½ cups liquified sour cream
▢ 1 head broccoli, cut into bite sized florets
▢ 3 ounces grated Parmesan, plus more for sprinkling
▢ 2 ounces shredded Smoked Gouda
▢ salt and pepper to taste
Basil leaves (optional)

Preheat oven to 375˚F.
Slice squash in half lengthwise, sprinkle with olive oil and seasoning and place onto a baking sheet, cut side down and roast for about 45 minutes or until squash becomes fork tender. Allow squash to cool for about 15 minutes, before scraping the flesh out with a fork, making sure to keep the peels intact. Place squash innards in a mixing bowl, lightly season with salt and pepper and set aside.

Place a skillet over medium heat and add oil and butter. Saute garlic and shallots for 2 to 3 minutes. Add liquified sour cream (microwave for 2 minutes and stir) and broccoli and simmer until a coating covers all ingredients. Season with salt and pepper. Begin stirring in small amount of Parmesan to create a cheesy sauce mixture.

Add spaghetti squash to the skillet and and toss together with sauce and broccoli. Adjust seasonings and stuff hollowed squash peels with squash mixture. Top each stuffed squash with a sprinkle of Gouda and cracked black pepper (optional). Top each stuffed squash with more shredded Parmesan, basil leaves and serve.
