Meatstock is coming up quickly! So what are we getting up to during the festivities?

If you ever wondered how many racks of Babyback Ribs you could lay flat on the Z Grills Australia 700E-XL, the answer is 12. 12 racks of ribs.
With our method of cooking them too it's almost criminal how easy it can be:
Each rack (supplied by Bell's Best Cuts of course 😉) is trimmed and rubbed in Bulldozer BBQ Flavours Hogfather, then placed in the Z Grill at "Smoke" setting for 30 mins.
After a little smokey hit, the temp is turned up to 121°C and remains that way for 3-4 hours until the ribs probe tender (I don't trust the 3-2-1 method as it tends to overcook ribs here in Aus).
Before taking them off each rack is covered in the sauce of our
choosing and given another 10 minutes to let the sauce set onto the meat.
The ribs then come out of the Z Grill, rest for 20 minutes and are ready to dine on. This works for one rack just the same as it does a dozen at once and has been our go-to method for a long time
now!

This was the year that we threw ourselves into the deep end of the Pop Up lifestyle.
In this Storytime video, we share some of the numbers behind our year in public events as well as give a brief overview of just how much work goes into them.
All in all, we mostly wanted to say thank you for the opportunities, the relationships gained and the incredible memories we'll be taking with us well past the 2023 calendar.
It has been an eye-opening year and we can't wait to keep the momentum rolling into the next one 💪
