Highly esteemed Chef Defeo was Classically trained at Le Cordon Bleu Institute of Culinary Arts in Pittsburgh.

He has close to two decades of experience working at fine dining restaurants and country clubs across the United States, including as Sous Chef at one of the most prestigious Country Clubs in the nation, The Club at Mediterra in Naples, Florida.

Even with his impressive resume, he is down-to-earth and personable. He enjoys interacting with guests and providing a dining experience that is both whimsical and nostalgic.
