A Christmas celebration for 100 Coastguards in Whangamata was a wonderful end to a busy few weeks for Jennifer Darling Retreat Catering. I’ve nothing but love for these long term clients, so I’m happy to once again roll up my sleeves and get cooking, just like old times. Thank goodness Christmas only comes once a year!!!!!

Sometimes I agree to cater events outside of my normal scope of operations, just because I think they’ll be fun and I know they’re right in my wheelhouse. And so I found myself catering the annual Steampunk celebrations in Thames this year. A Mad Hatters Tea Party, a White Rabbit Victorian Soirée and a Futterwacken at the Pumphouse. I rushed around like a mad hatter, making sure every morsel was perfect and presented in a manner to suit the Wonderland theme. Did I sit down at all this weekend…? Exhausted but proud of the beautiful food we presented to all the revellers decked out in weird and wonderful costumes, I gave myself a hug and reminded myself to slow down. Sometimes it’s enough to know I can do a good job, without actually having to go there.

The last month has seen me catering at Flaxmill for two wonderful groups, Grace Vineyard Church, and my regular crowd, St John.

In October this year we attended a retreat in Cooks Beach. The food was wonderful,thanks to Jennifer Darling Retreat Catering. Such delicous food varied menu and generous quantities.
Another delight was the joy of the happy chef Jennifer.
Without exaggeration it was a ten out of ten experience.

I’ve just completed 8 days catering for The Order of St John at glorious Flaxmill Bay, where even the stormy weather didn’t dampen our spirits, power cuts and all. One of my favourite groups to cater for these good people deserve a medal for all they do in the community, so it was with joy in my heart that I set about the task of nourishing souls with healthful food, to uplift and sustain them through their days of deep learning. I even performed a wee cabaret show on the last evening, which went down a treat!
I’m lucky enough to stay on site for the duration, in a beautiful little cottage called Manuka, where I took care of my own self with daily yoga and meditation followed by long walks by the beach and up the nearby Shakespeare Cliff, which proffers beautiful views of the area.
As usual I came away from this huge week of work feeling appreciated, valued, loved and refreshed. Its win win all round, feeling blessed.

The day the deputy Prime Minister ALMOST came to lunch!

The Thames on Kirkwood event centre was buzzing with activity as we busied ourselves preparing for the arrival of Winston Peters, in town for the opening of the Kopu marine facility. Kai Moana in the form of fresh oysters was served alongside an array of freshly baked savoury tarts, cakes, sweet slices and a huge variety of club sandwiches, which we’d been carefully preparing all morning. Amba Cattran had the venue looking beautiful, everything was in place for the 100 or so guests invited to the post ceremony lunch. Sadly, just moments before the first people arrived we received the call that the VIPs would be taking their lunch off site, so no selfie, sorry! Regardless, lunch was enjoyed by all in attendance and I had another fun day at work.

Touching on Funerals

I’m sometimes asked if I feel sad catering for so many funerals. Of course at times it is tough to say farewell, a life cut short or a close friend’s passing, but mostly I see it as a privilege. It’s a real honour to be trusted to provide the backdrop for what is most often a celebration of a life well lived. Friends and whanau coming together over food and a really good cuppa, sharing stories and laughter, this is where the healing begins. My task, as I see it, is to provide beautiful hand crafted food, each sandwich, savoury and sweet item prepared with love and attention to detail. I want guests to feel nourished and cared for, supported in their time of grief. We’ll pour your tea, assist elderly folk to their tables and if there’s left over food we’ll box that up for you to take home. The whole process for us is about giving and I find true joy in that.

A terrific 4 days at Karanga Camp in Swanson catering for 12 people on a psycosynthesis hui, made even more special with our viewing of the aurora australis on our last evening together. I always enjoy catering for this crowd and once again I wasn’t disappointed. Thanks to Meg and Moira and all my new friends, feels like whanau!

Another fabulous season catering for tour group ‘Nature and Nosh’ owned and operated by the awesome Kylie Rae. Kylie attracts small groups from over the ditch who love the idea of hiking in beautiful NZ while enjoying scrumptious local food in exceptional locations. I had the fun task of providing two dinner meals and a Pinnacles worthy packed lunch for their hike up on day 2. Guests stay at picturesque Onetai Lodge near Thames, run by Steve Crowcroft. In the evenings they enjoy a well deserved relaxing spa followed by good conversation around the fire pit and some pretty tasty food prepared by moi! Night one, a classic Kiwi BBQ… Local Cheese, Lamb Lollipops, Beef Burgers, Roasted Tomatoes, Creamy Kumara Bake, and Coromandel Mussel Fritters are on the menu. A more formal occasion on the second evening, I present a plated meal with succulent Pork Belly, Roasted Fennel, Crispy Crackling and an Asian inspired slaw, served on a bed of creamy Leek and Potato Mash. Dessert is Kafir Lime Crème Brûlée…. Mmmn sign me up buttercup!
I’ve really enjoyed my interactions with all of the guests, the tour guides and Steve who’s an absolute gem of a host with a range of accomodation options available for your next trip to Thames.
We’ll all be back next season, when I hope to meet you there ❤️

Wanda’s 90th High Tea

Who doesn’t love a High Tea and is there any occasion more deserving than a celebration of 90 years around the sun?!
Sunday afternoon saw the squash club full of party goers, sipping tea out of quaint English china and dining on delicate finger sandwiches, little sweet morsels and flaky homemade savouries. I didn’t see any pinkies in the air but it would have certainly been the occasion to do it! The birthday girl was in fine form, there was lots of laughter from the tables, even the rainy day didn’t dampen anyone’s spirits.
What an absolute privilege to be part of such a special occasion. ❤️

A photographical insight into where I’ve been for the last two weeks! It’s been a busy but happy time catering for 45 Auckland University students on 2 separate frieldtrips. The first 4 days were spent only a few kilometres up the road, at the Kauaeranga Education camp, located in the beautiful Kauaeraga Forest Park and just a stones throw from the start of the Pinnacles walk. Students on this field trip were studying plants and spent most of the day in the bush collecting data and learning about our native forest. We started each day bright and early at 0630 with a Jennifer Darling led yoga session on the deck, followed by a hearty breakfast with homemade bread, porridge, stewed fruit, Jennifers homemade muesli and preserves, and even bacon on the last day. Then the students headed out for the day with a packed lunch on board, leaving me to potter around in the ‘off the grid’ kitchen, using the gas hobs and the huge grill plate to prepare a tasty dinner. Always a great experience I love this clean and rustic camp with its huge fireplace and picturesque outlook.
Just one day to turn everything around I then made the journey up to Whatipu, one of my favourite spots in Auckland. The lodge is very well run, cute and cozy and I have electricity this time! A new group of students, this time birds are on the menu, (to study that is) including the Grey-Faced Petrel which has a colony in the enormous caves along the coast. Another glorious four days catering for these happy students, more yoga, this time in the afternoon on the grass under the trees, and time to wander down to the remote and wild black sand beach (the only cell reception to be had which I must admit is quite lovely). On the second evening we all trooped down to the caves, once famous for ballroom dance parties, one of them apparently has a built in dance floor now obscured under the black sand. After our cave visit we sat silently in the dark in the long grass, quiet as church mice waiting for the arrival of the Petrels, mutton birds to some. Alas they didn’t arrive but it was still a fun evening.
Back to Thames I have just 1/2 a day this time to turn things around, which includes a small corporate catering at the Thames on Kirkwood event centre, then I’m off to the shorebird centre in Miranda. Here I catered for a small group of 8, spending the weekend in Pukorokoro to learn Nature Journalling with Whanganui author and botanical artist Sandra Morris. A short 2.5 day stint, the weather is beautiful the mood relaxed and happy. Life is good, and despite the go go go nature of my business, I do believe I’m living the dream!
