Brisket was the tale of the tape for our weekend in Mannington, WV at the Forks of the Buffalo BBQ Throwdown! This is one of my favorite doubles of the year we compete at. We had a blast and got to hang out with a lot of good friends. As for the results…..

Good Friday night everyone! Let's talk Steak Cookoff Association for a minute. Several months ago I dud two polls one for which steak cook-off yall wanted and then which ancillary category to add to it. We had a lot of feedback which was awesome. Unfortunately now it's not showing in our number of sign ups. I know traditionally we get a lot of signs up just before the event however with the price of things we need to know to go through with this or cut it. I would really hate to cut it because we have already put money into some prizes for this. We are going to keep signups open for this for one more week then make a decision on this. So if this is something you still want to do this week is the time to get registered for this! Our pagent is next Saturday so we will make the announcement at the end of the pagant! Looking forward to seeing you all in less than one month! Also if you are a bbq team we need to start getting those applications in!

This weekend we'll be heading back to Galax for Smoke on the Mountain.... where this competitive cooking journey all started for me in 2017! The combination of SCA, MBN and KCBS all wrapped into 1 weekend combined with a public festival makes this event such a spectacle! Lets GOOOOOOO!!!!!!

We started the weekend off with a bang at the Friday night SCA Competition in Wise! In tonight’s event we placed:

- 7th place Bacon Category (bacon wrapped shotgun shells)
- 3rd 🥉 place Steak🔥

We cooked everything on Jealous Devil fuels and seasoned everything with blends from JonesyQ BBQ Co.

We got to attend Covington Cork and Pork Festival this weekend, which is an absolutely amazing contest from the top down and is organized so well. This competition took us over the hump on a few goals we've been trying to achieve in Brisket, and also chasing a perfect score of 180. After two separate days of ancillary and BBQ turn in's these were our results:

It’s National BBQ Month and we’re doing a classic Pulled Pork recipe! Simple bbq staple that could be cooked with really any indirect heat grill or smoker!🔥🐽

- we scored the fat cap and rubbed mustard as our binder all over. Take JonesyQ BBQ Co. XTC and rub that into the pork. Then put a thick layer of Money Honey or your favorite BBQ rub. We cooked with Jealous Devil pellets at 300 degrees foe 3-1/2 hours and then topped the pork with butter, brown sugar, honey and more rub. Wrap back up foe 3-4 hours until the internal temp is 203-205. Rest for 2 hours, shred and enjoy!!

Smoked Jalapeño Popper Salmon Pinwheels!!!❤️‍🔥❤️‍🔥 Here is our FISH recipe for National BBQ Month

Recipe - Start by sautéing diced up bacon, jalapeños and onions. Strain and collect the drippings from this. Mix with a little JonesyQ BBQ Co. XTC rub and a block of cream cheese. Spread evenly on one side of your salmon and roll the fish up, tying it with cooking string and cut your pinwheels. Smoke on Jealous Devil charcoal & cherry wood with a cedar plank around 325° for 30 minutes. Apply glaze and let them cook for 10 more minutes until finished (Glaze - drippings from the bacon mix with 1 TBSP of honey and Tropical XTC)

Happy National BBQ Month

Here is Recipe 1 - CHICKEN!

We used Springer Mountain Farms for our chicken choice.
For the recipe: take chicken thighs/legs and cover them in a seasoning blend of lemon pepper, XTC (garlic mix) and honey rub. Cook on indirect heat for 30 minutes at 350°. Place in a tray with butter, seasoning, mix, and lemon juice. Cover back up and put it on the grill for 40 more minutes. Spoon the glaze over each piece of chicken (Glaze-4 tbsp butter, 1 tsp minced garlic, lemon zest, 1tsp pepper & 3 tbsp honey) set back on the grill for five minutes and finish with lemon juice. Enjoy!

What we're trying to say is: do you really need to buy loads of "cheaper charcoal" to understand that JD is better? Do you really have to basically eat smoke instead of beautiful meat to think "yeah, JD is all that"? It’s National Barbecue Month and I want to start off by highlighting the newly released INKBIRD INK-VS03 vacuum sealer I got a chance to test it out and It was a major upgrade from my previous sealer.

I seal up a lot of my raw and cooked meats / The things I really liked about this model was the built-in cutter and the internal roll holder. I used to have to cut my rolls with scissors. We knocked out our first master series Contest of the year and it was a success! We got our name called 3 times and ended up walking away with
3rd place chicken Springer Mountain Farms
3rd place pork Lojas Swift
8th place overall

We ran all new smokers on the new trailer but stuck with the stick burning roots on a Char-Griller. We had a blast hanging out and catching up with friends. Congrats to the grand champ Steve Dotson on another dominating performance and Jon Wade on his RGC! Congrats to everyone else who got their names called!
