Today is Sunday Funday with Brooks Wine !!!!
The cheese partner is
Antonelli's Cheese featuring 3 Texas Cheesemakers.
I'm very excited to pair them up with 2 beautiful Brooks Wines. Muska Pinot Noir (really love this vineyard) and Ridgecrest Riesling.
I had to taste test last night. 😋

Cheese Professional friends and colleagues the Recertification emails went out for those eligible to complete your Recertification.

I earned my CCP in 2015 and my CCSE inaugural class of 2018 so my 3 yr Recertification always hits same year on both.

9 years as a CCP and 6 years as a CCSE have flown by!
I think about all the education opportunities I've been able to provide in the industry and the incredible memories associated with those courses I've taught all over the world.

The code of conduct associated with these certifications are the strongest out there to maintain the integrity of the association and the certification itself.

I am proud to be part of the American Cheese Society and support their Certifications.

Baked Apples with Blue Cheese and Honey 🍏🧀🍯
These Baked Apples with Blue Cheese and Honey are a delightful combination of sweet and savory, balancing the natural sweetness of tender baked apples with the sharp creaminess of blue cheese. A drizzle of honey adds a luscious finish, making this dish perfect as an appetizer, dessert, or even a unique side dish.

Ingredients:

4 large apples (Granny Smith or Honeycrisp), cored
2 tablespoons butter, melted
4 oz blue cheese, crumbled
¼ cup chopped walnuts or pecans (optional, for added crunch)
2 tablespoons honey (plus extra for drizzling)
1 teaspoon cinnamon (optional)
Fresh thyme or rosemary sprigs (optional, for garnish)
Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set it aside.
Prepare the Apples: 2. Core the apples, leaving the bottoms intact to create a well for the filling. You can use an apple corer or a spoon for this. Place the cored apples in the prepared baking dish.

Stuff the Apples: 3. Brush the inside and outside of the apples with melted butter. 4. In a small bowl, mix the crumbled blue cheese with chopped walnuts or pecans (if using). Stuff each apple with the cheese mixture, packing it into the center of each apple.

Bake the Apples: 5. Drizzle 2 tablespoons of honey over the stuffed apples and sprinkle a pinch of cinnamon on top (optional for extra warmth). 6. Cover the baking dish with foil and bake the apples in the preheated oven for 20-25 minutes, or until they are tender but still holding their shape.

Finish and Serve: 7. Remove the foil and bake uncovered for an additional 5 minutes to lightly brown the tops. 8. Drizzle with extra honey and garnish with fresh thyme or rosemary sprigs for a touch of color and flavor.

Tips:

You can substitute blue cheese with gorgonzola or goat cheese if you prefer a milder flavor.
Serve these baked apples warm alongside toasted bread or crackers for a more substantial dish.

TODAY and every Tuesday during the Gulfport Tuesday Fresh Market, we are happy to welcome Barbara's Kitchen, a small local family business offering jams, jellies, sauces, salsas and more, boih familiar and unique. Carrot Cake Jam, anyone? Yes.! We carry Barbara's Kitchen products in Stella's Divine Wine & Gourmet all week long, but on Tuesdays you'll have a chance to meet and talk to these sweet folks, who will be located outside the shop in our "Vestibule." And of course, you'll want to stop in to Stella's Divine Wine & Gourmet and Stella's Sundries while you're there.

Sweet Grass Dairy all the way from Thomasville Georgia are bringing incredible award winning cheeses and their amazing Pimento Cheese.
I've paired Sweet Grass on one of my virtual wine and cheese events this past year to rave reviews.

Returned from a 7 week adventure in Europe in search of Cheese, Beer, Wine and authentic culinary experiences.
First thing that caught my eye in the pile of mail was my culture magazine: the word on cheese
A favorite Cheese Publication!
Pairings featured are Drinks with Cheese.
I'm frequently hosting Wine and Cheese pairings so I was eager to see what pairings Culture Magazine had.

Imagine my surprise and delight to see my latest obsession Linie Aquavit paired with Norwegian Brown Cheese. This cheese comes under various names with Ski Queen Gjetost being most commonly available in the United States. I happened to bring back a block of Brunost from Trondheim Norway where I was judging at the World Cheese Awards.
I began experimenting with the vast variety of Aquavit or Akevitt while in Norway for a little over 2 weeks.
Fortunately I also brought some little bottles of Linie home for gifts and me 😉
