The crew is tired, we are underslept, we are prepping 24/7, but we’re taking care of business. We’ve accomplished so much in the past 2 days. Y’all would be so proud. We’re up here hangin with some very well established food trucks and we’re keepin up just fine 💯
Despite this being an amazing weekend so far…it’s been a lot for everyone, & not just us. My fellow food truckers are climbing mountains just to be able to do this. Each facing obstacles of their own & some are life changing. We’re working together to make sure everyone is good. Lifting each other through hard times and being there in whatever way is needed. What more can you ask for?
The food truck community is in a tier of its own. Lined with people who want a different way to live & willing to put the work in to make that happen. & we know that about each other before we ever actually meet so there’s this relatability that we share & it’s just… “let me roll my sleeves up, how can I help?” Pretty much on handshake.
For the food trucks going through those life changing events… I just ask that you send positive energy their way, they need it.

Just wanted to make sure y’all know that our online ordering is different from other restaurants. We only have one line and have learned it’s best to limit how many orders we can intake. We take one order every 15 minutes online in addition to foot traffic. When you order but it says it’s unavailable it’s because those time slots have already been reserved.
Also, I apologize if your comments do not get responded to. I am usually unable to reach you until after service or until a break in service. I do have someone who helps a bit but she has a full time business as well so I don’t expect her to take every question. The best thing you can do if you’re wondering what time we’re open to is to visit our Facebook or Instagram page and look for our weekly schedule posts. Also, we will sometimes post to our story if we are to close early 🙏🏻
I try to respond to everything but unfortunately it’s not always possible. If you see a post with no picture then just picture me rapidly making something quick with the little time I have available! 😭

Alright y'all, this one doesn't come easy so buckle up.
Starting today, we are increasing our prices on burritos, crunchwraps, bowls, and nachos. I wanted to wait until the end of the season but feel this is a necessary change so we can continue to give you the best experience possible. As you know, post-covid came with a lot of economical struggles. & 4 years removed, businesses are still feeling the impact. Although I cannot say this change is due to rising costs, please understand that this is what I think is fair for you, and for us. Even though food costs have been relatively stable, prices are still highly inflated & we've eaten those costs as a business to keep things affordable for you. In addition, I am not a greedy man. Just a husband/father who is doing his best to provide for my family.
Coming from a lower-class home, I've always wanted to create a menu that people can afford, and give back when the opportunities are available. So in light of our increased prices, there are two things I'm doing to help ease the burden on our guests.
1. Effective immediately, we are paying for a digital rewards/ loyalty program which I hope you'll find to be generous! You will need to sign up with your phone number to be eligible for rewards. Please give me feedback on this program so I can tinker with the rewards to make it more appealing. Check your email because you may have received the introduction just earlier today.
2. In addition to our normal menu, we are also introducing a "lite" menu. Many times we will have guests who do not choose their full topping selections and thus receive less food. In order to make this more fair, we are going to implement a menu that makes the cost of those items more realistic. This menu is a work in progress but I hope it can serve as a value menu type of offering.
Lastly, please know I have been gathering feedback over the past few months both good and constructive. I will make sure to do everything in my power to build on this feedback and to continuously improve our food quality and the quality of our customer service.

Andio Sisters is filling in for us at Local Roots for lunch tomorrow so we can focus on our food truck operations. I apologize that we haven’t been at Roots. We love our community down there 🙏🏻
Looking at the future, we will continue to take a step back to not only make sure our food truck is running at its best, but to also give those opportunities to other chefs who are looking to build their businesses. Local Roots has often been referred to as a small business incubator and while I love serving our food there, it makes more sense to allow others to grow as we did over the past few years.
We will continue to support Local Roots and their chefs as they are a part of our family and hope you will do the same!

For all the folks who were daily visitors, y’all are amazing. Seriously, so many recurring customers it’s actually crazy. I know we don’t provide traditional fair food and I hope having access to our meals made your day, because you made ours.
This was the most fun I’ve had in the truck in a long time and has given me some sort of renewed motivation. That fire was burning bright this week and I’m ready to bring it back to Woo. I plan to be on the truck more for the rest of the year. I want to experience this every time we open that window and start serving. I’m looking forward to every interaction from now until the end of the year. I definitely need a break though 😂. I’ve got over a week’s worth of emails and messages to follow up on y’all so imma probably be ghost for a few so bare with me while I catch my breath 💀

Who has an appreciation for hand-cut ingredients? Every time I go to the store I take a look at the pre-cut onions, peppers, etc that have been mangled by some commercial food processor. What do they all have in common? Low quality cuts, less nutritional value, and less flavor! Do you ever purchase these for convenience? I know I have! Sure, they might be fine for cooking as they’ll get cooked down, but what about recipes that call for raw veggies like a fresh salsa or salad? & yes cutting your own produce is cheaper ( I am a huge advocate for learning knife skills) but I know from experience that knives make people uncomfortable for a multitude of reasons. We are going to try selling pre-cut vegetables this week at Local Roots using ingredients from their locally sourced market. If you’re someone who enjoys the convenience of precut ingredients, swing by and see what we have!
