Last week we had the honor of serving the men and women whose mission is to fly, fight and win – airpower anytime, anywhere. 510 Airman were able to relax and attend a Medieval themed event which included a performance of medieval battle ⚔️ 🛡️
The menu was requested to be medieval themed as well with jumbo chicken legs 🍗 , sausage medley, pulled pork, baked beans, mashed potatoes.
3 different food stations to feed the masses.
The best part was being given a custom patch by a Master Sergeant for this event.
Great week and thank you to manager Ash for grinding out those early mornings and long days.

Two questions we get asked the most:
1. What kind of wood do you use?
2. Where do you get your wood?
We use a 50/50 blend of California White Oak and Almond. Every smoker is different and every climate is different. The wood I use may not be what runs good in an offset smoker or what works for someone in Kansas City. The Almond is the ingredient that my fires were always missing. Properly seasoned Oak just burns so fast and the coal bed doesn’t maintain. The Almond is a more dense log, burns hotter, and makes a great coal bed that doesn’t go out fast. This allows new splits to be put on the fire and immediately ignite.
Placer Firewood keeps us stocked up with seasoned wood. We pay for the extra split to keep these sticks about 3-4 inch in width. Larger splits will put out a bad smoke during the ignition period when you put a fresh piece on the fire. We also NEVER use any rounds. EVER. The most important part of smoking meat is the fire. I don’t care who you are. You can get a low grade piece of meat and make it taste good and edible if it’s smoked properly. Now take that same meat and have terrible fire management and bad wood 🤷 might as well save yourself the time, order Door Dash, and take up pickleball. 🤣 Contact Omar at Placer Firewood and he will get you right.
