I make this soup "Fancy" occasionally, but when I'm in a rush to get lunch or dinner on the table, I stick with crushed tortilla chips, shredded cheese and a sprinkle of cilantro for my toppings. 20 minutes from beginning to end-so easy! My daughter actually prefers this over the typical Chicken Noodle on sick days... (the green chile and jalapeno help!)....Chicken Tortilla Soup.

What's on my mind?? Fall! I LOVE seasonal cooking. My Apple Vinaigrette Salad, Red Carpet Soup, Honey Skillet Cornbread, Carrot Cake with Maple Salted Caramel Cream Cheese frosting, Butter Chicken, a big pot of Pinto Beans, Turkey Tenderloin with Madeira Mushroom Cream...(shall I go on? ) All are on dinner rotation during this season of cooler and slower evenings....Throw in some extended family, friends and a deck of cards and life is good.

It has taken me a bit to perfect these, but the man of the house grinned approvingly after tasting and declared them "dangerous!"..Not as dangerous as a whole cheesecake though. Right?😛
